What is the one thing that brings families together no matter how inconvenient the time may be?  Food!  Sunday dinners, holidays, birthdays–you can always count on the family being together and everyone being hungry!

I love family dinners and have created amazing memories during those times.  But I have one restriction: I have diabetes.

When you fight diabetes and blood sugar you have to get creative and be prepared so you don’t have to completely restrict yourself when it comes to a treat.  My family connects at the dinner table and can spend hours talking over dessert.  So I always make sure I make a dessert that everyone can eat.  I’ve found that it magically helps all of my guests feel more comfortable too.  My motto,  Life’s short–no one should feel left out when it comes to dessert!

Berry Low-Carb Trifle

Over the years I’ve been invited to many social gatherings.  It seems almost everyone is watching their weight or dealing  with sugar challenges these days.  That’s why this dessert has become my go-to dessert for all occasions.  If I don’t say, “It’s low-carb,” no one knows but me!  But I can offer a delicious alternative to those who are careful about their sugar intake.  Honestly, it is almost always the first dessert gone!

My Berry Low-Carb trifle has the best of both worlds with a light angel food cake layered in between a delicious pudding and cream mixture filled with fresh fruit layered on top of each other creating an aura of richness without all of the sugar.

Let me teach you how to make my Berry Low-Carb Trifle.  Yes, you can have your cake and eat it too!

    I make something similar but use cool whip. I also like to put crushed pineapple sometimes in the pudding, cool whip mixture. It looks gorgeous!

      Oooh that sounds good. Pineapple is extra delicious, but sadly high in carbs for those of us that have to watch them. Thanks though for sharing what you like to add to your trifle.

    Looks beautiful! Your recipe is very similar to my Peach Melba Trifle but I use sweetened condensed milk. I just might try substituting non-fat milk and see how it turns out!

    This is a perfect article for me! I’ve been on a low-carb diet for 5 years already. I’m a borderline type 2 diabetic and I’ve been on medication (1,000 mg of metformin a day!) for 4 years. I stopped taking medication because I am really having bad side effects with metformin and decided to be strictly serious with my diet. So far, I’ve been having great lab results.
