Cherry Almond Salad with Poppy Seed Dressing

It’s with thankful hearts that we welcome November, a month to celebrate the principle of gratitude. We had a bountiful harvest here in Idaho, {more on that Wednesday} and we have had the most glorious Fall ever. We celebrated with friends yesterday, some that have showered us by sharing and giving of themselves. For each of these things we give thanks. Enjoy this perfect autumn salad…that can help make your life a bowl of cherries!

Cherry Almond Salad

  • 1 head of romaine, washed, chilled and torn into bite size pieces
  • 1/2 red onion, sliced thinly
  • 4 ounces Cotija cheese, crumbled (a robust Mexican cheese)
  • 3/4 cup dried tart cherries

Mix romaine, onion slices, crumbled cheese and tart cherries together.

Sugared Almonds

  • 1/2 cup slivered almonds
  • 3 Tbsp. sugar
  • 1/4 cup butter

Melt together butter and sugar, then add nuts. Bake on cookie sheet at 300 degrees for 20 minutes stirring often. Add dressing and top with sugared almonds just before serving.

Poppy Seed Dressing

  • 3/4 Tbsp poppy seeds
  • 1/3 cup white vinegar
  • 3/4 cup oil
  • 1/3 cup sugar or sugar substitute
  • 1/4 cup grated onion
  • 3/4 tsp. salt
  • 2 Tbsp. prepared mustard

Mix together in a blender or food processor until creamy. Serves 6.

Serve with love and thanksgiving.
