Cookies and Cream Mini Cheesecakes

What a fun little week it’s been! I have had the best time with my youngest grand-girl who lives the very furthest away from me. She loves to read story books and sit on my lap, looking at pictures on the computer. I’m amazed at how smart she is and she is a drama queen…
who knows what all the animals say and showed no fear at the petting zoo!
Like her gramies, she is a bird watcher and we have seen hundreds of baby finches together…
and a mama duck with all of her babies!
After she’s ready for bed, we play peek-a-boo through the stair railing…
and are enjoying the ride!
I’ve been making lots of little things to eat,
so it only seemed right that we have some little

Cookies and Cream Mini-Cheesecakes

on our picnic today…
Have you seen these new Oreo Cookies yet? They are the perfect size for these baby cakes.
You will need some foil baking cups and a muffin pan…
Drop a Oreo Fudge Creme Cookie in the bottom of the foil cup…
Mix room temperature cream cheese, sugar, vanilla and eggs together until smooth…
Divide between 12 muffin cups…
Bake for 25 minutes…cool and chill.
There are a myriad of ways to serve these babies.

Top with fresh fruit, pie filling, caramel or chocolate sauce, cookies or a kiss!

Cookies and Cream Mini Cheesecakes

  • 1 box Oreo Fudge Cream Cookies
  • 2 (8 ounce) packages cream cheese
  • 1/2 cup sugar
  • 1 tsp. vanilla
  • 2 eggs
  • Toppings of your choice

Preheat oven to 325 degrees. Line muffin pan with foil baking cups, not paper. Place a cookie in the bottom of each cup. Mix cream cheese, sugar, vanilla and eggs together till smooth. Divide between 12 baking cups. Bake for 25 minutes at 325 degrees. Cool and chill well. Top with chocolate sauce, fruit pie filling or garnish with a cookie or a chocolate kiss. Serve with love!

    What a cute little granddaughter. And I also just noticed in your profile that you served an LDS mission to NY. As a BYU grad, that caught my eye! I love your mini cheesecakes too, especially since they use a cookie for the crust. I’ll be looking for those new Oreos at the store now!
