Pulled Pork Sandwiches

Enjoy my tried and true, juicy, slow cooker pulled pork. Add your favorite BBQ sauce for sandwiches or add it to enchiladas, tacos, or nachos.

Ingredients
  • 2 medium yellow onions, thinly sliced
  • 4 medium garlic cloves, diced
  • 4 pounds pork sirloin roast
  • 2 cups barbecue sauce, (purchased or homemade)
For Rub:
  • 1 tablespoon brown sugar
  • 1 tablespoon chili powder
  • 1 tablespoon kosher salt
  • ½ teaspoon ground cumin
  • ¼ teaspoon cinnamon
Instructions
  1. Line the bottom of a slow cooker with onions and garlic.
  2. Pat pork roast dry with paper towels.
  3. Combine brown sugar, chili powder, salt, cumin, and cinnamon and rub on roast.
  4. Place meat on top of the onion and garlic.
  5. Cover and cook until pork is tender, 6-8 hours on high,8-10 on low.
  6. Remove pork roast to cutting board.
  7. Strain liquid through mesh strainer and return solids to slow cooker.
  8. Use 2 forks to shred the meat into bite size pieces.
  9. Return the shredded meat to the slow cooker and add the barbecue sauce and mix to combine.
  10. You may add the strained liquid in small amounts to thin if desired.
  11. Taste and season with salt as needed.
Notes
Be sure to save the stock, (strained liquid) from the roast. You can thicken it for gravy or add to sauces or soups.
