Impossible Coconut Pie
 
 
A luscious Impossible Coconut Pie that makes it's own crust. It truly is the easiest yummy pie ever topped with cream and a fresh berry!

Ingredients
  • 1 stick butter, melted, (plus more for greasing pie pans)
  • 1-3/4 cups sugar
  • 4 large eggs
  • ½ cup self-rising flour
  • 2 cups sweetened shredded coconut
  • 2 cups milk
Instructions
  1. Preheat oven to 350 degrees and butter two 9-inch glass pie pans.
  2. In a large bowl, whisk the melted butter with the sugar. Add the eggs and beat until smooth. Stir in the flour, coconut and milk.
  3. Divide the mixture between the pie pans and bake in the lower third of the oven for about 1 hour, until the pies are firm to the touch and golden.
  4. Transfer the pies to a rack and cool completely before serving.
Notes
The pies can be made ahead and refrigerated overnight. Return them to room temperature before serving with, a little whipped cream, a sprinkle of toasted-coconut, or a fresh fruit garnish.
