Red Pepper Hummus is delicious and satisfying as a spread,dip or pita filling. Garlicky and flavorful, the addition of white beans brings an enticing texture. The bonus, it is ready in seconds thanks to a blender or food processor.

Ingredients
  • 2 (15-ounce) cans garbanzo beans, drained
  • 1 (15-ounce) can white beans, drained
  • ⅓ cup roasted tahini
  • ¼ cup lemon juice
  • 1-1/2 teaspoon salt
  • ¾ cup roasted red peppers
  • 2 cloves garlic, halved
  • 1 Tablespoon olive oil
  • 1 pinch smoked paprika
  • 1 teaspoon fresh parsley, minced
Instructions
  1. Place the garbanzo beans, white beans, tahini, roasted red peppers, lemon juice, salt and garlic in a blender or food processor. Blend until smooth.
  2. Taste and adjust seasons to your liking.
  3. Pour mixture into a serving bowl and drizzle with olive oil. Sprinkle with smoked paprika and parsley and serve with pita bread and crudités.
