Fiesta Brunch Casserole

Traditional breakfast? Rarely for this girl..
But I sure do like brunch fare or even better brinner!
If you tried my
then here’s another quick version I love, love, love year round.
Fiesta Brunch Casserole
it’s got a Mexican twist and can be served in a myriad of ways!
Last night’s low-carb meal had me singing…I added chips and salsa to my man’s and he joined in too!

Fiesta Brunch Casserole

  • 1 cup sliced mushrooms, fresh or canned
  • 1 (4 oz.) can diced green chilies
  • 1 (3.8 oz.) can sliced black olives
  • 10 large eggs
  • 1/2 cup flour
  • 1/2 tsp. baking powder
  • 2 cups low-fat cottage cheese
  • 2 cups shredded cheddar cheese
  • 5 Italian sausages, slipped from their skins, cooked and drained

Cook and drain sausage. Let cool while you mix the rest of the casserole together. Drain chilies and olive and slice mushrooms. Whisk 2 eggs with the flour and baking powder till smooth. Add the remaining 8 eggs and whisk well. Combine with the rest of the ingredients. Pour into a greased 13×9″ baking dish and bake at 350 degrees for 1 hour. Serve with salsa, warm tortillas, beans, fresh fruit or just a salad. It’s all good!
