Mix it up, bake and serve along side chili, soups, and stews all winter and beside a crisp cool salad in the summer.  It’s delicious year-round fare!

For years I searched for a great cornbread recipe that my husband and kids would like.  I would make a lovely looking pan of cornbread and here, “it’s too dry.”  My Favorite Easy Cornbread Recipe has a cake-like consistency and reminds my husband of how corn fritters taste. It’s my go to recipe because it’s so easy to make.

Seriously, it’s all measured out for you, so lets get started!  Preheat the oven to 350 degrees. Grab a large mixing bowl, a cake mix, and a couple of boxed cornbread mix. Combine the cake mix and cornbread mixes, add the eggs, water, milk, and oil and mix well. Stir in the drained corn.

Spray a large 4 quart baking  dish with Baker’s Joy, the best baking spray around, try it, you’ll like it. Place in the oven and bake for approximately 35 minutes. Be sure to do the toothpick test as it make a few extra minutes, remember not all ovens are the same.

Ingredients
  • 1 cake mix, yellow or butter recipe
  • ⅔ cup water
  • ½ cup butter, melted
  • 5 large eggs
  • 2 "Jiffy" corn muffin mixes
  • ⅔ cup milk
  • 1 (11 oz.) well-drained can of corn
Instructions
  1. Preheat oven to 350 degrees
  2. Combine all ingredients except the corn.
  3. Mix at medium speed for 4 minutes.
  4. Fold in the drained corn.
  5. Pour into a greased and floured pan, 4.8 Quart Oblong Baking Dish (love Baker's Secret spray).
  6. Bake for 35 minutes in a 350 oven.
  7. Remove from oven and serve.
