White Chocolate Strawberry Shortcakes

There are legends about shortcakes and where they began.  Let’s add our luscious White Chocolate Strawberry Shortcakes to this year’s history books.  Individual cupped-cakes are classy, a sophisticated treat for tea time or the finale at your most elegant dinner party!

Traditional shortcakes are quite like a biscuit and often dry.  It’s thought that shortcakes were first made with cornmeal by Native Americans, who called the strawberry, “heart-seed berry.”

Adding white chocolate to the batter created the perfect platform for macerated strawberries and stabilized whipped cream.  I also opted to use vanilla bean paste.  It’s awesome for baking and more cost effective than vanilla beans.

White Chocolate Strawberry Shortcakes are a dessert you’ll want to share over and over.  In my mind, the kind of deliciousness that dreams and legends are made of!

Preheat oven to 425 degrees for ramekins or 375 degrees for the Wilton perfect dessert shell pan.

In a small saucepan over low heat, melt your chocolate and butter and set aside.

In a medium bowl, using an electric mixer, beat eggs, egg yolks, sugar, and vanilla bean paste until well blended, about 3 minutes.  On low speed, gradually beat in the chocolate mixture until well blended.  Increase speed to medium and beat until mixture is light and fluffy, about 3 minutes.  Using a rubber spatula, stir in flour until blended.

Divide batter equally among ramekins or dessert shell pan.  Place ramekins or pan on a baking sheet and bake in preheated oven until firm on top and cakes pull away from the sides, 16 to 18 minutes.

If you’re using ramekins, run a knife around the edges of each one.  Invert on individual plates.  If your using a dessert shell pan, cover with a cooling rack and flip it upside down.  The cakes will release easily.

Cool and serve with a scoop of vanilla ice cream, macerated strawberries, and even stabilized whipped cream. Top with a slice of a fresh strawberry and some strawberry juice.

  • 4-ounces white chocolate, broken up
  • ½ cup of butter
  • 2 eggs
  • 2 egg yolks

  • 6 scoops of vanlla ice cream
  • macerated strawberries

    Can you make these shortcakes with milk chocolate also? I am not a fan of white chocolate but this recipe sounds so good that I would just replace it with milk chocolate and make it, if it’s possible to get the same result.
