Ingredients
Crust
  • ¾ cup butter, melted
  • 2 tablespoons granulated sugar
  • 1-1/2 cups cookie crumbs, (I used vanilla wafers)
  • ½ cup chopped nuts, (I used pecans)
Cheesecake
  • 2 (8-ounce) packages of cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla
  • 2 large eggs
Middle Jell-O Layer
  • 1 (3-ounce) Jell-O mix, (I used berry blue)
  • 1-1/2 cups boiling water
  • 1(8-ounce) container of whipped topping
Creamy Layer
  • 1 cup sour cream
  • 4-ounces cream cheese, softened
  • 4 tablespoons granulated sugar
  • 1 teaspoon vanilla
Top Jell-O Layer
  • 1 (3-ounce) Jell-O mix, (I used strawberry)
  • 1-1/2 cups boiling water
  • 1(8-ounce) container of whipped topping
Garnish
  • whipped cream
  • fresh fruit
Instructions
  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, combine butter, 2 tablespoons sugar, cookie crumbs, and nuts.
  3. Spray a 10" springform pan with non-stick spray, and pat crust into it.
  4. Cool in refrigerator while you beat cream cheese, ½ cup sugar, 1 teaspoon of vanilla and eggs for 10 minutes.
  5. Pour filling into crust and bake for 20 minutes or until it won't stick to your finger.
  6. Remove to a wire rack and cool completely.
  7. When the cake is cool, stir middle layer flavor of Jello with 1-1/2 cups of boiling water and stir to dissolve. Gently fold in whipped topping until completely combined.
  8. Pour over cheesecake and place in freezer for an hour.
  9. After 45 minutes, make the creamy layer in a mixing bowl whip sour cream, 4-ounces of softened cream cheese, 4 tablespoons of sugar, and vanilla together. Pour over cheesecake and return to freezer for another 30 minutes.
  10. While the creamy layer is setting up, make the top Jell-O layer by stirring the top layer flavor of Jello with 1-1/2 cups of boiling water and stir to dissolve. Gently fold in whipped topping until completely combined.
  11. Pour over the set creamy layer and return to freezer for one last hour.
  12. Remove from the freezer and refrigerate until ready to serve, at least 2 hours.
  13. Before serving, carefully run a knife around the pan to separate the Jell-O from the side. Unhinge pan and gently lift from cheesecake.
  14. Cut cheesecake into pieces and garnish with whipped cream and fresh fruit.
Notes
I use a 16-ounce container of whipped topping split in half. Be sure to keep this cheesecake well chilled.
