Chicken Zucchini Stuffing Casserole

1 pound zucchini (and or yellow crookneck squash) unpeeled and sliced 1 yellow onion, chopped 1 can cream of chicken soup 1 cup sour cream 1 cup carrots, chopped 2 cups cooked chicken, (I use leftover rotisserie chicken) 1 package Pepperidge Farm stuffing ½ cup butter, melted 1-2 cups shredded cheddar cheese Cook squash, carrots and chopped onion in boiling salted water for 8 minutes. Drain well. Combine soup and sour cream; fold in drained squash, carrots, onions, and chicken. Mix stuffing with butter. Spread half of the stuffing into a 9 x 13 pan. Spoon vegetable-chicken mixture on top of stuffing. Sprinkle cheese over-top. Sprinkle top with remaining stuffing. Bake at 350 for 45 minutes.
