Melt in Your Mouth Marshmallow Brownies
Serves: 2 dozen brownies
  • 1 cup butter, 2 sticks
  • 5-1/2 Tablespoons cocoa
  • 1-1/2 cups flour
  • 2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts
  • 2 cups mini marshmallows
  • ½ cup butter, 1 stick
  • 2 Tablespoons dark cocoa
  • ¼ cup milk
  • 3-1/2 cups powdered sugar
  • 1 teaspoon vanilla
For Brownies
  1. Preheat the oven to 350?F.
  2. Grease and flour a 9X13-inch pan.
  3. In a medium saucepan melt together the butter and cocoa. Cool slightly.
  4. Mix flour and sugar together.
  5. Add the chocolate mixture to the flour and sugar mixture.
  6. Add eggs one at a time, beating well after each one till batter is smooth.
  7. Fold in vanilla and nuts.
  8. Pour batter into prepared pan.
  9. Bake for 30-35 minutes.
  10. Do not overbake. Brownies can be slightly sticky to the touch.
For Frosting
  1. In a saucepan combine the butter, cocoa, and milk. Heat to boiling while stirring.
  2. Mix in the powdered sugar and vanilla is smooth.
  3. Turn on your broiler.
  4. Sprinkle mini-marshmallows over the baked brownies.
  5. Pour hot frosting over marshmallows and spread to cover completely.
  6. Place brownies under the broiler and watch carefully. When frosting is bubbly and marshmallows are puffed up, remove from broiler.
  7. With a flat spatula swirl frosting and marshmallows together.
  8. Place pan in freezer for about 20 minutes to cool and set up.
