Preheat oven to 400 degrees. Combine first 5 ingredients well and press into a cookie sheet. Bake 10 minutes at 400 degrees. Cool. Separate into crumbs with a fork. Sprinkle ½ crumbs into a 9x13" pan. Drizzle with 8 ounces of caramel topping. Soften ice cream, stir in fresh peaches and spread over crumbs. Sprinkle remaining crumbs over ice cream. Cover and freeze well.
To serve, drizzle a little sauce on a plate. Add an ice cream square. Drizzle with more caramel sauce. Garnish with a shot of whipped cream and top with a slice of fresh peach.
