Cold and creamy, my recipe for IDAHO Ice Cream Squares represents the very best of what is produced in our great state, Happy 150th Birthday to us!

Ingredients
  • 2 cups flour
  • ½ cup potato chips, crushed
  • ½ cup brown sugar
  • 1 cup pecans or almonds, chopped
  • 8 ounces butter, melted
  • 16 ounces caramel ice cream topping
  • 3 medium peaches, peeled and minced
  • ½ gallon vanilla ice cream
  • whipped cream, for garnish
  • 2 peaches, for garnish
Instructions
  1. Preheat oven to 400 degrees. Combine first 5 ingredients well and press into a cookie sheet. Bake 10 minutes at 400 degrees. Cool. Separate into crumbs with a fork. Sprinkle ½ crumbs into a 9x13" pan. Drizzle with 8 ounces of caramel topping. Soften ice cream, stir in fresh peaches and spread over crumbs. Sprinkle remaining crumbs over ice cream. Cover and freeze well.
  2. To serve, drizzle a little sauce on a plate. Add an ice cream square. Drizzle with more caramel sauce. Garnish with a shot of whipped cream and top with a slice of fresh peach.
