"YOU Take the Cake" Cupcakes

For Cake
  • 24 cupcakes (2 split cupcakes per cup)
For Cream Cheese Frosting
  • 4 ounces unsalted butter, softened
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • food coloring if desired
For Decorations
  • Use your favorite sprinkles, nuts, candies, coconut
  • 12 cellophane bags
  • 12-clear forks
  • 12-clear cups
  • 12-cards
For Cream Cheese Frosting
  1. In a large bowl, beat together the butter and cream cheese with an electric mixer.
  2. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract.
  3. Add food coloring if desired
Split cupcakes and layer with Cream Cheese Frosting in a clear cup. I'd suggest you color the frosting to match ribbon, or sprinkles. Repeat the layering with the other cupcake and more frosting. Top with sprinkles, nuts, or candy. Push a clear fork handle down into the cupcake. Attach your card to the tines in the fork. Place in a clear cellophane bag and tie up with curling ribbon or twine.
