Banana Nut Sheet Cake

Banana Nut Sheet Cake
  • ½ cup butter, softened
  • 1-1/2 cups sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup chopped walnuts
  • 2 medium overripe bananas, mashed (about 1 cup)
Cream-Cheese Frosting
  • 1 package (8 ounces) cream cheese, softened
  • ½ cup butter, softened
  • 2 teaspoons vanilla extract
  • 3-3/4 to 4 cups powdered sugar
  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream the butter and sugar, then add the eggs, sour cream and vanilla.
  3. In a medium bowl, combine the flour, baking soda and salt. Gradually add the dry ingredients to the creamed mixture, then stir in nuts and bananas.
  4. Spread batter into a greased 15 x10 x 1 inch pan.
  5. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean.
  6. Cool and frost. Cut into squares.
To make Cream-Cheese Frosting:
  1. In a bowl, beat the cream cheese, butter and vanilla.
  2. Gradually beat in powdered sugar till creamy and smooth.
  3. Spread on cooled cake.
