In a shallow dish, whisk together the eggs, coconut milk, coconut extract, vanilla extract and salt. Place the shredded coconut on a plate. Dip both sides of the coated bread into the shredded coconut. Brush a little bit of egg mixture on top of the coconut to make it stick to the bread.
Heat a large skillet or griddle to medium-high heat. Cook the slices of bread to golden brown on one side and then turn and cook the other side.
Serve immediately.
Creamy Coconut Syrup
In a 2 quart saucepan bring butter and sugar to a boil.
Remove from heat and add buttermilk, coconut extract, and baking soda. Stir well, soda will foam up a little.
Serve hot and enjoy.
