Coconut French Toast
  • 3 large eggs
  • ¾ cup light coconut milk
  • ½ teaspoon coconut extract
  • ⅛ teaspoon salt
  • 1 cup shredded, sweetened, coconut
  • 8 slices of French bread, cut into 1" slices
Creamy Coconut Syrup
  • 1 cup syrup
  • ½ cup butter
  • ½ cup buttermilk
  • ½ teaspoon coconut extract
  • ½ teaspoon baking soda
Crusted French Toast
  1. In a shallow dish, whisk together the eggs, coconut milk, coconut extract, vanilla extract and salt. Place the shredded coconut on a plate. Dip both sides of the coated bread into the shredded coconut. Brush a little bit of egg mixture on top of the coconut to make it stick to the bread.
  2. Heat a large skillet or griddle to medium-high heat. Cook the slices of bread to golden brown on one side and then turn and cook the other side.
  3. Serve immediately.
Creamy Coconut Syrup
  1. In a 2 quart saucepan bring butter and sugar to a boil.
  2. Remove from heat and add buttermilk, coconut extract, and baking soda. Stir well, soda will foam up a little.
  3. Serve hot and enjoy.
