Ingredients
For Bread
  • ⅔ cup oil
  • ⅔ cup honey, 1 cup sugar, or 1 cup of new Stevia Extract In the Raw
  • 1½ Tbsp. salt
  • 5½ cups steaming hot water (120-130F)
  • ½ cup gluten flour
  • 3 Tbsp. dough enhancer
  • 2½ Tbsp. Instant yeast
  • 14-16 cups whole wheat flour
For Huckleberry Butter
  • 1 cup huckleberry jam (or whatever kind of jam you like)
  • 2 cups softened butter
  • 1 Tbsp. powdered sugar
Instructions
For Bread:
  1. Mix together first four ingredients in mixer with a dough hook.
  2. Check the temp of your water and add the yeast.
  3. Add ½ of the flour and beat. Put in 1-2 more cups of flour, gluten flour, dough enhancer. Beat again.
  4. With mixer on medium speed, add remaining flour just until dough pulls away from the sides of the bowl. Knead 6-10 minutes on medium speed.
  5. Pre-heat oven for 1 minute to LUKE WARM and turn off.
  6. Spray or oil pans.
  7. Pour dough out onto oiled counter, divide and shape into loaves and put into pans.
  8. Let loaves rise 35 minutes in warmed oven. Do not remove bread from oven; turn oven to 350 F. and bake for 30 minutes.
  9. Tip out of pans and cool on cooling rack.
  10. I like to butter the tops for a softer crust.
  11. If you do not have a mixer with a dough hook and are kneading this by hand, gradually add last cup of flour to keep dough from sticking to counter. You will add more flour when kneading by hand than when using a mixer simply to be able to handle this moist dough. With wheat bread, always add the least amount of flour possible to keep bread moist. Knead 10 minutes before shaping dough into loaves.
For Huckleberry Butter
  1. Gently fold together to preserve the whole huckleberries, or you can whip it with a mixer if you prefer.
Notes
If you do not have a mixer with a dough hook and are kneading this by hand, gradually add last cup of flour to keep dough from sticking to counter. You will add more flour when kneading by hand than when using a mixer simply to be able to handle this moist dough. With wheat bread, always add the least amount of flour possible to keep bread moist. Knead 10 minutes before shaping dough into loaves.
