Fabulous fresh ingredients come together in our Avocado Butter Lettuce Salad with Lemon Vinaigrette, making for a perfectly delicious Springtime salad!

For Salad
  • 12-ounces of butter lettuce chopped (1-2 heads depending on your salad serving)
  • ½ cup chévre (fresh goat cheese)
  • 1 large ripe avocado, chunked
  • ½ cup sliced almonds, toasted
  • 1 large lemon for juicing and zesting
For Vinaigrette
  • ¼ cup lemon juice
  • 2 Tablespoons cider vinegar
  • 1-1/2 Tablespoon sugar
  • ½ cup olive oil
  • Salt and pepper
  1. Wash and chop the butter lettuce.
  2. Mound lettuce on plates with a scoop of chévre on each plate.
  3. Using a microplane or zester, zest the lemon over the top of the salad.
  4. Combine vinaigrette ingredients in a jar and shake until combined.
  5. Garnish with avocado chunks.
  6. Drizzle vinaigrette over salad.
  7. Top with toasted almonds and serve.
