Recipe type: Pastry
Cuisine: American
Serves: 12
  • ¾ cup milk
  • ¼ cup butter, softened
  • 3¼ cups all-purpose flour
  • 1 (.25 ounce) package instant yeast
  • ¼ cup white sugar
  • ½ teaspoon salt
  • ¼ cup water
  • 1 egg
  • 1 cup brown sugar, packed
  • 2 teaspoons ground cinnamon
  • ½ cup butter
  • Icing
  • ½ cup softened butter
  • 4 ounces softened cream cheese
  • 3 Tablespoons Milk
  • 1 ½ Tablespoon Vanilla
  • 4 cups Powdered Sugar
  1. Heat the milk in a small saucepan until it just bubbles and then remove from heat.
  2. Mix in the butter. Stir until melted. Let cool until lukewarm. I like to pour it into a new bowl and set it on the counter. It is usually perfect temperature by the time I need it.
  3. In a large mixing bowl, combine 2¼ cup flour, yeast, sugar and salt and mix them all together. I use my Kitchen aid mixer and it combines it like a dream.
  4. Add water, egg and the milk mixture to the dough. Mix it completely together.
  5. Add the remaining flour about ½ cup at a time, stirring well after each addition.
  6. When the dough has just pulled together, turn it out onto a lightly floured surface and knead until smooth, about 5 minutes. Or if you have it in a mixer turn it to level 6 for 5 minutes with the dough hook.
  7. Cover the dough with a damp cloth and let rest for 10 minutes.
  8. Mix together brown sugar, cinnamon and butter.
  9. Roll out dough into a 12x9 inch rectangle. Spread dough with butter/sugar mixture. Fold the dough in half and pinch the seam to seal. Cut into 12 equal size rolls. I love to use dental floss to do this!
  10. Place cut side up on a lightly greased 9 x 13 pan. Cover and let rise until doubled, about 30 minutes. Preheat oven to 375 degrees F.
  11. Bake in the preheated oven for 17 minutes or until browned. Let cool.
  12. For the Icing: Cream the butter and cream cheese with an electric mixer until they are thoroughly combined and smooth.
  13. Use the beaters on low and add in 2 cups powdered sugar. Add in the milk. Combine. Mix in the rest of the powdered sugar. Put the vanilla in and mix together.
  14. If you would like the consistency to be thinner add in more milk. Place on top of slightly cooled cinnamon rolls!
