Chocolate Truffles are sinfully delicious, bite-size and easy to make for a luscious dessert everyone will love! They are great for gifts!

Ingredients
  • 2 cups or 1 bag (12 oz) semisweet chocolate chips (I like ghiradelli)
  • 2 Tablespoons butter
  • ¼ cup whipping cream
  • 2 Tablespoon flavoring - raspberry, vanilla, hazelnut, orange or lemon
  • 1 Tablespoon shortening
  • Optional Toppings:
  • Melted chocolate
  • Chocolate shavings
  • Cocoa powder
  • Shredded coconut
  • Finely chopped nuts
  • Sprinkles
Instructions
  1. Lay down foil or parchment on a cookie sheet.
  2. In 2-quart saucepan, melt 1 cup of the chocolate chips over low heat stirring constantly. Once melted, take off heat and stir in butter. Stir in whipping cream and any flavorings if desired.
  3. Cool in the refrigerator for 15 minutes or until it is thick enough to hold a ball shape.
  4. Drop 1 teaspoon of the chocolate mixture on the cookie sheet and roll into balls. Freeze 30 minutes.
  5. In 1-quart saucepan, heat the remaining 1 cup of chocolate chips and shortening over low heat stirring constantly until chocolate is melted and mixture is smooth. Take off heat. Dip truffles in the chocolate. Return to cookie sheet and add any optional toppings. Put truffles into fridge for about 10 minutes.
  6. If you want to drizzle white chocolate over the truffles, melt the white chocolate in the saucepan and drizzle over the truffles. I prefer to use a plastic ketchup bottle or even a ziploc bag with a corner cut out to drizzle the chocolate. Let cool in the fridge until set.
  7. Store in airtight container in refrigerator.
