Chunky Apple Walnut Cake
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 1 cup buttermilk
  • ½ cup canola oil
  • 2 tsp. vanilla
  • 2 eggs
  • 1-1/2 cups all-purpose flour
  • 1-1/2 cups whole wheat flour
  • 1 tsp. baking soda
  • 1 Tbsp. cinnamon
  • ½ tsp. salt
  • 3 cups apples, unpeeled and chopped (about 3-4)
  • 1 cup walnuts, chopped and toasted
Maple Cream-Cheese Frosting
  • ½ cup butter
  • 8 oz. cream-cheese
  • 3 cups powdered sugar
  • 2 Tbsp. milk
  • 1 tsp. maple extract
Instructions
Chunky Apple Walnut Cake
  1. Preheat oven to 350 degrees.
  2. Mix all but the apples and walnuts well in a mixing bowl. Add apples and walnuts and stir well to incorporate.
  3. Spray a 9x13" pan with non-stick spray.
  4. Pour batter into prepared pan and bake for 40-45 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  5. Cool on a wire rack, and then frost.
Maple Cream-Cheese Frosting
  1. Cream butter and cream cheese. Add powdered sugar and mix well. Add milk and maple extract and thoroughly whip together. Frost the cake. Refrigerate any leftovers.
