Cheese Spinach Artichoke Dip

Perfectly delicious Cheesy Spinach-Artichoke Dip is served with bread chunks, corn-chips, or veggies. Everybody loves it, so it's great party fare.

Ingredients
  • 2 cups Mayonnaise
  • 1 (16 oz.) carton Sour Cream (may use light)
  • 1 (8 oz.) Cream Cheese (may use ⅓ less fat)
  • 1 cup Parmesan Cheese
  • 2 cups grated Cheese,(Colby-jack or Three-cheese blend)
  • 1 box frozen, chopped Spinach
  • 2 cans Artichoke Hearts, quartered
  • 1 bunch Green Onions, diced
  • 2 Roma Tomatoes, diced
Instructions
  1. Stir the mayo, sour cream, and cheeses until well blended.
  2. Defrost spinach in the microwave, until completely thawed. Use hands to squeeze out water, then separate the spinach into small pieces. Stir into the mixture.
  3. Dice the quartered artichoke hearts, then stir in.
  4. Spread mixture into 2 glass pie plates, (stoneware or glass).
  5. Bake at 350 for 35-45 or until about half of the surface is golden brown.
  6. Remove from oven and garnish with chopped onions and tomatoes.
  7. Serve at room temperature with tortilla chips, veggies or crackers.
Notes
If you refrigerate it before serving, then warm gradually in the oven until soft and slightly warm again.
