"Christmas

I make a fruit gelatin type salad 3 times a year tops, but it just wouldn’t be a proper holiday celebration without our cherished Christmas Ribbon Gelatin Salad. We eat with our eyes first, and this salad is both appealing and tasty.

Christmas Ribbon Gelatin Salad

Traditionally, most families have turkey or ham. We also love to serve this pretty salad with a prime rib roast or grilled ribeye steaks. That really is what all of our family prefers, a Christmas Day barbecue, however with beef prices on the rise, it’s too expensive to grill steaks for our 30+group. Ham is yummy, served with au gratin potatoes, curried fruit bake, glazed carrots, roasted green beans with garlic, potato knot rolls, Christmas Ribbon Gelatin Salad, and a variety of tasty desserts.

Christmas Ribbon Gelatin Salad is colorful, festive, and easy. Just layer it up while you’re wrapping gifts, and finishing up last minute preparations for the big day!

For the 1st layer, begin by adding lime gelatin to 2 cups of boiling water. Stir to dissolve and then pour into a 9 x 13″ glass dish. Top with 2 bananas that have been thinly sliced. Let it set up in refrigerator for 1 to 2 hours.

Now add a 2nd or middle layer. Place lemon gelatin, water, marshmallows, cream cheese and pineapple in a blender, I sure love mine. Blend until smooth. Cool. Add mayonnaise and whipped topping. Fold together. Pour evenly over the first layer, cover and let set up in the refrigerator for another 1-2 hours.

Last of all, for the 3rd layer, add boiling water to raspberry gelatin and stir to dissolve. Add cold water and raspberries. Pour it over the middle layer, cover and let it set in the refrigerator, preferably overnight.

When it’s time to serve it, I like to plate it with a lettuce leaf and then garnish with a dollop of whipped cream on top.
