Golden brown and crispy, Granola French Toast with Mixed Berry Syrup is amazingly satisfying. \u00a0I am admittedly a big fan of granola, I especially like my recipe for homemade,\u00a0Low-Fat Granola<\/a><\/strong>, on anything from yogurt to dessert bars. \u00a0It just took my French toast recipe to a new level, and the Mixed Berry Syrup is both intriguing and lively.<\/p>\n

Granola French Toast with Mixed Berry Syrup<\/h2>\n

With lots of family visiting over the holidays, I’ve had several occasions to share Granola French Toast with Mixed Berry Syrup. \u00a0I’ve been surprised at how filling it is. \u00a0Most people consider 2 pieces of French toast a serving, however I’m stuffed and can barely eat one slice, especially with Mixed Berry Syrup. When you’re planning you may want to keep that in mind.<\/p>\n

I like to make my Mixed Berry Syrup \u00a0and let it simmer while I’m preparing the Granola French Toast. \u00a0In a medium saucepan<\/strong><\/a>, combine 1 cup of mixed berries, (I use the frozen ones from my member warehouse), 1 cup of water, and 1 cup of sugar. \u00a0I bring it to a boil over medium high heat and then turn it to medium low and let it simmer. \u00a0It makes 3 cups of syrup.<\/p>\n

For the Granola French Toast, start by preheating a large griddle<\/strong><\/a> to 375 degrees and whisk eggs, milk, and vanilla together. \u00a0 Place it in a shallow container, I like to use a glass pie plate<\/strong><\/a>. \u00a0Add the granola to another bowl or pie plate.<\/p>\n

Dip a slice of bread in the egg and milk and then into the granola.<\/p>\n

Add the coated bread to the hot griddle and repeat with more slices of bread.<\/p>\n

I like to use a large spatula<\/strong><\/a> and press against the bread further helping the granola adhere to the bread before I flip each piece. \u00a0Don’t turn the granola coated bread until it’s golden brown. \u00a0After you do turn the bread, allow that side to brown as well. \u00a0Remove to a platter and keep warm until you’re ready to serve it.<\/p>\n
