I’ve mentioned before that my 2 daughters lucked-out and married great guys who cook. Shane makes healthy, light and fluffy, the Best Whole Wheat Waffles, our whole family looks forward to. His mom, is a fantastic “from scratch cook” who taught her 8 kids to do it all. Shane treated us to his crisp homemade waffles, our first, memorable breakfast of 2016!

So what’s for breakfast at your house this weekend? Have you been looking back, reflecting upon 2015 and wondering, “How can I make 2016 my best year yet?” It seems like everyone I know is racing for the gym, hoping to get in shape. When it comes to work-outs and healthy eating, balance is key. Lowering carbs, adding fiber, and smaller portions of healthy foods that satisfy us longer make all the difference for me. One-half of a whole wheat waffle with a small portion of fresh fruit and skim milk meets my needs. Adding a little whipped cream on the top encourages me to walk just that much further!

Before we start mixing, here’s a few waffle making suggestions for your cheery kitchen. You will need a waffle maker for this recipe. It’s well worth the investment as mine has been going strong for 30+ years. A great set of mixing bowls is helpful too. I love my set with lids and use them all the time. A whisk works, but my little, yet powerful electric hand mixer, (loving this new sassy color), is such a joy to work with, store and clean. My grain mill has paid for itself over and over as I can make my own whole wheat flour fresh, love this, however it’s not at all essential to the recipe.
