It’s been snowy in Idaho and a hot, savory, bowl of soup just hits the spot! \u00a0We love Sausage Apple Soup, served up in a big bowl with a little fresh parmesan cheese sprinkled on top and some crusty sourdough bread or with a grilled cheese sandwich. Low-fat, low-carb, made with Italian turkey sausage, onion, peppers, kidney beans, and apples, it’s unique and healthy. \u00a0<\/p>\n
I need to give credit to my sister Kim, who found Sausage Apple Soup, (I think it was named something else and she’s always called it that), in a Light & Tasty Magazine many years ago. It takes just over an hour to make and we love to dip bread in the flavorful broth.<\/p>\n

Slip the skins on the sausage and break it up in a large<\/strong>\u00a0Dutch oven<\/strong><\/a>. \u00a0Cook the sausage and onion until meat is no longer pink; drain.<\/p>\n <\/p>\n Add the chicken broth, crushed tomatoes, vinegar, green pepper, red pepper, brown sugar, salt, ground mustard, sage, chili powder, and pepper.<\/p>\n <\/p>\n Bring to a boil. Reduce heat; cover and simmer for 30 minutes, stirring occasionally. \u00a0Add chopped apples and kidney beans and simmer for 15 more minutes. \u00a0Serve hot in a pretty soup bowl<\/strong><\/a>. \u00a0Makes 2 quarts, or 8 servings.<\/p>\n <\/p>\n
