It’s the time of the year when we are craving crunchy, light, fresh, salads more and more. My grandson, Johnathan, recently left us to serve the people in Guatemala City for two years. \u00a0We held a special family farewell party to honor him, and he asked me to make an Asian slaw he loves, Broccoli Cabbage Cranberry Salad. \u00a0It’s full of bright vegetables, dried cranberries, and roasted ramen noodles, sesame seeds, almonds, and then tossed with a delicious sesame dressing.<\/p>\n

I love this salad and make it often. \u00a0It stands on it’s own, or add some grilled or rotisserie chicken to make a main dish meal. It’s super healthy and just so crunchy and filled with tangy flavors.<\/p>\n

Begin by heating the oven to 425 degrees. \u00a0Spread the crumbled ramen noodles, sesame seeds, and almonds on baking sheet<\/a>. Roast for 5 minutes, stir and toss them a little and return them to the oven for 3 more minutes until they are light golden brown and toasted looking. \u00a0All ovens aren’t the same, so please watch so that they don’t burn. \u00a0Remove from the oven and set aside to cool.<\/p>\n
