Here’s all you do:<\/strong><\/em><\/span><\/h2>\n

Start with a sugar-free, fat-free Angel Food Cake. I found these all over NYC and they are in Boise too. Hopefully you can find them in your local grocery store. You can<\/i> also make one from scratch! \u00a0Mix up a large sugar-free, fat-free vanilla pudding mix with skim milk. \u00a0With a mixer<\/a><\/strong>, whip 2 cups of heavy whipping cream with a little vanilla extract. \u00a0Combine the prepared pudding and the whipped cream.<\/p>\n

\u00a0To Assemble:<\/strong><\/em><\/span><\/h2>\n
You’ll want to invest in a trifle bowl<\/a><\/strong>, and use it because they are so pretty, but any bowl will be fine. \u00a0Put about 1\/3 of the pudding-cream mixture in the bottom of a trifle bowl and spread it evenly.<\/div>\n
    \n
  • Slice and cube 1\/2 of your cake.<\/strong> \u00a0Toss it on top of pudding-cream mixture. \u00a0Add about 1 cup of fresh berries and then cover with another 1\/3 of the pudding mixture.\u00a0<\/span><\/li>\n
  • Slice up 1-1\/2 fresh kiwi.<\/strong> Save the extra half for the top.<\/span><\/li>\n
  • Press kiwi slices around the sides of your glass dish.<\/strong> Add another layer of berries, the other half of the cake cubes, and the last 1\/3 of the pudding-cream mixture. Tuck some sliced strawberries around the sides too<\/li>\n
  • Whip 1 more cup of heavy cream.<\/strong> I like to sweeten mine with about half a dropper of liquid stevia, or Splenda works well too. Add a little vanilla and top the trifle, right up to the top of the bowl.<\/li>\n<\/ul>\n

    Cover and place your Berry Low-Carb Trifle in the fridge for several hours, or even overnight. I like to make mine in the morning and serve it that evening.<\/div>\n<\/div>\n

    After chilling, the trifle may settle a little. If you have a little more cream, you may want to fill it to the top again. Add more fresh berries, remaining kiwi, and toasted nuts, if like me, you enjoy a little crunch.<\/p>\n
