It’s got 2 zings in one with the perfect amount of crunch and sweet whipped cream to mellow out each bite. It’s simply irresistible!!!<\/p>\n

You can actually make any kind of cookie crust; graham cracker, vanilla wafer, or whatever you like. \u00a0I used those thin little fancy ginger cookies by Amy’s. \u00a0What really kicks it up though is crystalized ginger combined with zesty lemon. \u00a0The flavors are to the moon good!<\/p>\n

Start by preheating the oven to 325 degrees.<\/p>\n

Next, make a ginger cookie crust. It’s remarkably easy in my food processor<\/a><\/strong>.\u00a0<\/strong>\u00a0It makes the finest crumbs and then I just add in the sugar, butter, and finely minced crystalized ginger and give it a whirl. \u00a0Add it to a pie plate<\/a>\u00a0<\/strong>and press the crumbs up the sides of the pie plate. \u00a0Bake for 10 minutes. Remove crust and cool on a wire rack.<\/p>\n

While the crust is cooling, grate\u00a0<\/strong>your\u00a0<\/strong>lemons with a citrus zester<\/a><\/strong>, and mix the filling in an electric mixer as directed.<\/p>\n

Pour filling into the cooled crust. \u00a0Bake it for 15 minutes. \u00a0Cool on a wire rack and refrigerate for at least 2 hours, preferably over night.<\/p>\n

Before serving cover evenly with Stabilized Whipped Cream<\/strong>.<\/a>\u00a0 Garnish with a twisted thin slice of lemon and serve.<\/p>\n
