Yeah! Still getting lots of squash… and for this recipe you need about 3 medium.<\/span><\/div>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n\n\n\n\n

Brown, season and drain fat from ground beef.<\/span><\/div>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n\n\n\n\n

Beef-Zucchini Party Casserole<\/b><\/i><\/span><\/span> <\/b><\/i><\/span><\/div>\n

Prepare 1st Layer:<\/b><\/i><\/span><\/div>\n
    \n
  • 2 pounds ground beef <\/span><\/li>\n
  • 1 tsp. seasoning salt<\/span><\/li>\n
  • 1\/4 tsp. ground pepper<\/span><\/li>\n
  • 2 cloves garlic, minced<\/span><\/li>\n<\/ul>\n
    Cook meat and seasonings in skillet until meat is not longer pink. Drain well and spoon into baking dish. <\/b><\/i><\/p>\n

    Prepare 2nd Layer<\/b><\/i>:<\/span><\/div>\n

      \n
    • 3 zucchini squash, sliced<\/span><\/li>\n
    • 1\/2 cup green chili peppers, chopped <\/span><\/li>\n
    • 1\/2 cup green pepper, chopped<\/span><\/li>\n
    • 1 onion, chopped fine<\/span><\/li>\n
    • 2 Tbsp. butter, (optional)<\/span><\/li>\n
    • 1-2 cups of shredded cheddar cheese <\/span><\/li>\n<\/ul>\n
      Steam squash, peppers and onion together. Drain any liquid and mash<\/leo_highlight> well. You can use butter if you’d like it creamier. (I don’t like to add more fat, and I don’t miss the flavor). Spread over meat mixture and sprinkle with cheddar cheese. I leave out the butter, but bring on the cheese!<\/p>\n

      Prepare 3rd Layer: <\/b><\/i><\/span><\/div>\n

        \n
      • 2 eggs<\/span><\/li>\n
      • 2 cups creamed cottage cheese<\/span><\/li>\n
      • 2 Tbsp. parsley<\/span><\/li>\n
      • 1\/4 cup Parmesan cheese<\/span><\/li>\n<\/ul>\n
        Beat eggs slightly and stir in cottage cheese, parsley and Parmesan cheese. I like to sprinkle more Parmesan cheese on top. Bake at 375 degrees for 45 minutes or until set. Let it set for 5 minutes before serving. Makes 12 servings.<\/span><\/div>\n
