Party time? \u00a0Cheese Spinach Artichoke Dip is a favorite appetizer at most restaurants because people love it. \u00a0I’m always game for anything with artichokes and cheese and this stuff is yummy! \u00a0It’s usually gone pretty quickly, but if by chance you have leftovers, there’s lots of great ways to use it up, but then that’s a whole post all by itself. \u00a0It doubles and triples well for large crowds and parties and that’s just what we did this past weekend.<\/div>\n

We live in a great neighborhood. Saturday we came together to celebrate the temple marriage<\/a> of this beautiful couple, Tiara and Blake. \u00a0<\/i>We have watched Tiara grow up. Her parents, some of the people who make our neighborhood what it is,\u00a0were so happy. \u00a0<\/span><\/div>\n

Isn’t this such a fabulous cake? I loved the pleated fondant, beautiful brown roses, and color contrast.<\/div>\n

\u00a0Two more wonderful neighbors, Caryn and Lori organized and made much of the food. \u00a0They made so many luscious cookies, bars, tarts and these caramel chocolate pretzel sticks! \u00a0Petite chocolate cups filled with chocolate mousse and topped with sliced almonds, pumpkin cake rolls, lemon-cream tarts, creme brulee cheesecake bars, and my personal favorite, truffles with an “S” for Tiara and Blake’s last name. It was all beautifully done with lots of love.<\/div>\n

Cheese Spinach Artichoke Dip<\/h2>\n

Under their direction, I made Cheese Spinach Artichoke Dip\u00a0for 100! \u00a0It’s as easy to make this dip for 100 people as it is for 35, just triple the recipe. Stir the mayo, sour cream and cheeses until well blended. Thaw and squeeze the water out of the spinach and add it. Add the quartered artichoke hearts.<\/div>\n

I like to make mine in a pretty casserole dish<\/a><\/strong>, or if you are making it for a big party, spread the mixture into six large pie plates<\/strong><\/a>. Bake at 350 degrees for 35-45 minutes until the surface is golden brown.<\/div>\n

Top the hot dip with a fresh garnish of chopped tomatoes and green onion. Serve warm or at room temperature with tortilla chips, veggies or crackers and enjoy.<\/div>\n
