Zucchini Parmesan Frittata<\/i><\/b><\/span><\/p>\n\n3 small zucchini and\/or summer squash<\/span><\/li>\n1 onion,diced<\/span><\/li>\n 2 Tbsp. olive oil<\/span><\/li>\n9 eggs<\/span><\/li>\n1 cup ricotta<\/span><\/li>\n1-1\/4 cup Parmesan cheese<\/span><\/li>\n1-1\/2 tsp. basil<\/span><\/li>\n1\/2 tsp. thyme<\/span><\/li>\n1 tsp. salt<\/span><\/li>\n1\/2 tsp. pepper<\/span><\/li>\n<\/ul>\nSlice squash, dice onion and saute in an oven proof skillet for 5 to 6 minutes.\u00a0 While the squash is cooking, whisk eggs well.\u00a0 Add ricotta cheese and 1 cup of Parmesan cheese.\u00a0 Add the basil, thyme, salt and pepper.<\/span> \nPour mixture into the skillet with the squash and onion.\u00a0 Sprinkle the last 1\/4 cup of cheese over the top and bake in a 350 oven for 45 minutes.\u00a0 Turn the oven to broil and watch carefully until the top of the frittata is lightly brown and bubbly.\u00a0 Remove from the oven and let rest before cutting for 5 minutes.\u00a0 Serve with love!<\/span><\/p>\nAhha:\u00a0 I’ve pictured what I served my guy who enjoys toast or a muffin with his frittata.\u00a0 He also likes potatoes, which I throw in when I have cooked ones ready in the fridge.\u00a0 I just “eat around them!”\u00a0 For me, I like to garnish mine with sliced tomatoes, omitting any bread.\u00a0 We also had a tossed green salad.\u00a0 Thanks to those of you who have e-mailed me and asked for more low-carb ideas.\u00a0 I’ll keep them coming! <\/span><\/i> \n\u00a0 <\/span><\/i><\/p>\n\n
