I love family dinners and have created amazing memories during those times. \u00a0But I have one restriction: I have diabetes.<\/p>\n

Over the years I’ve been invited to many social gatherings. \u00a0It seems almost everyone is watching their weight or dealing \u00a0with sugar challenges these days. \u00a0That’s why this dessert has become my go-to dessert for all occasions. \u00a0If I don’t say, “It’s\u00a0low-carb,” no one knows but me! \u00a0But I can offer a delicious alternative to those who are careful about their sugar intake. \u00a0Honestly,\u00a0it is almost always the first dessert gone!<\/p>\n

My Berry Low-Carb trifle has\u00a0the best of both worlds with a light angel food cake layered in between a delicious pudding and cream mixture filled with fresh fruit layered on top of each other creating an aura of richness without all of the sugar.<\/p>\n

Berry Low-Carb Trifle<\/h2>

Over the years my low-carb treats have been enjoyed by all. If I don't say, \"It's sugar-free,\" no one knows but me! It seems everyone knows someone who deals with sugar challenges, so go ahead, and make a Berry Low-Carb Trifle. \u00a0Yes, you can have your cake and eat it too!<\/p>

Here's all you do:<\/strong><\/em><\/p>

Start with a sugar-free, (made with Splenda), fat-free, Angel Food Cake. I found these all over NYC and they are in my small Idaho town. Hopefully you can too. You can<\/i> also make one from scratch! \u00a0Mix up a large sugar-free, fat-free vanilla pudding mix with skim milk. \u00a0Whip 2 cups of heavy whipping cream with a little vanilla extract. \u00a0Combine the prepared pudding and the whipped cream.<\/p>

To Assemble:<\/strong><\/em><\/div>
\u00a0<\/div>
You'll want to invest in a\u00a0[easyazon_link identifier=\"B000CMH2U2\" locale=\"US\" tag=\"cheerykitch02-20\"]trifle bowl[\/easyazon_link], and use it because they are so pretty, but any bowl will be fine. \u00a0Put about 1\/3 of the pudding-cream mixture in the bottom of a trifle bowl and spread it evenly.<\/div>

\"\"<\/a>Slice and cube 1\/2 of your cake. \u00a0Toss it on top of pudding-cream mixture. \u00a0Add about 1 cup of fresh berries and then cover with another 1\/3 of the pudding mixture.\u00a0<\/span><\/p><\/div>

Slice up 1-1\/2 fresh kiwi. Save the extra half for the top. <\/span><\/div>

\"Berry<\/a>Press kiwi slices around the sides of your glass dish. Add another layer of berries, the other half of the cake cubes, and the last 1\/3 of the pudding-cream mixture. Tuck some sliced strawberries around the sides too.<\/div>

Whip 1 more cup of heavy cream. I like to sweeten mine with about half a dropper of liquid stevia, or Splenda works well too. Add a little vanilla and top the trifle, right up to the top of the bowl.<\/div>

Cover and place your Berry Low-Carb Trifle in the fridge for several hours, or even overnight. I like to make mine in the morning and serve it that evening.<\/div><\/div>

\u00a0After chilling, the trifle may settle a little. Hopefully, you have a little more cream and can fill it to the top again. Add more fresh berries, remaining kiwi, and toasted nuts, if like me, you enjoy a little crunch. <\/span><\/div>
