Unlike most pestos, it uses less oil thanks to the creamy consistency of the avocado. \u00a0Try it with pasta, veggies, as a dip, and slather as a sandwich spread. \u00a0I also like to thin it a little and use it as a delicious fresh dressing on salads.<\/p>\n

Almost as much as the taste, I love that I can make it in 5 minutes for about $5.00. \u00a0My only caution is that it turns brown as it ages and so I usually don’t make it in large amounts, just enough to enjoy in a day or two.<\/p>\n

Traditional Italian pesto<\/strong> is made strictly with basil, pine nuts, Parmesan, garlic, and good olive oil. It’s a classic sauce. However you can switch out the basil for another handy herb or leafy green, replace the pine nuts with a different favorite nut, or swap the Parmesan for pecorino or asiago. \u00a0In my pesto, I replaced some of the oil and the cheese with creamy avocado. Here’s the basic formula; green + nuts + cheese + olive oil, but be daring and creative with what you like!<\/em><\/p>\n

Pesto<\/strong>\u00a0<\/i>is a generic term for anything that is made by pounding, and yes, you can create Avocado Basil Pesto with a <\/span>mortar and pestle<\/a><\/strong>. My question is why would you when you can make it in a <\/span>11-cup food processor<\/a><\/strong> or <\/span>blender<\/a><\/strong> in no time flat?\u00a0<\/span><\/p>\n

Combine<\/strong> avocado, (love this cool tool<\/a><\/strong>), basil, pine nuts, and garlic in a food processor or blender. With the machine running, slowly stream in the lemon juice, olive oil, and water if needed to achieve a smooth pesto. Puree until completely blended and creamy. Season with salt and pepper to taste. Use immediately or keep refrigerated for 1-2 days.<\/p>\n

Are you wondering what the term \"Au Gratin,\" means? \u00a0Interestingly, it's anything covered with bread crumbs or cheese and then baked until brown. \u00a0So for this dish, we are using potatoes, but let your mind go wild and think of all the au gratin designer dishes you can make!<\/p>

Begin by boiling 3 pounds of potatoes, using your favorite variety, for approximately 30 minutes to 1 hour. \u00a0It takes longer at higher elevations and the size of your potatoes makes a difference too. \u00a0Just wash them and cover with water. \u00a0Bring them to a boil, cover and turn heat to low-to medium heat so that they are gently simmering. \u00a0Your potatoes need to be firm, not mushy, so check on them till they are ready.<\/p>

Remove cooked potatoes from the pan, cool till you can handle them without burning your hands, peel, and cube or slice them into a large mixing bowl<\/a><\/strong>. \u00a0Add the B\u00e9chamel Sauce, (I prepare mine while the potatoes are cooling), and 1 cup of cheddar cheese and carefully mix it together, trying not to break or mash your potatoes. \u00a0Scoop the potatoes into a 3 quart baking dish<\/a>\u00a0<\/strong>and sprinkle with remaining 1\/2 cup of cheese. \u00a0Sprinkle with paprika and cover and refrigerate if you are making ahead. Be sure to bring your potatoes to room temperature before placing them in the oven.<\/em><\/p>
