Zesty Lemon Blueberry Cake is oh so moist and pretty, just the right amount of sweet goodness. Top with zesty lemon glaze, whipped cream and fresh berries for a cool summer dessert that will impress!<\/span><\/p>\n

Zesty Lemon-Blueberry Cake<\/b><\/span><\/p>\n

It’s much easier than you think. You can whip one up in no time.\u00a0With a cake mix, pudding mix and fresh blueberries, mix instant pudding, eggs, oil, and water following the cake mix directions.<\/div>\n

In a plastic bag combine 1\/4 cup of cake mix and 2 cups of fresh blueberries. Now give um a gentle shake!\u00a0Fold berries into the cake batter. Grease and flour, (I use no-stick cooking spray with flour), and prepare a bundt pan. \u00a0Bake in a 325 degree oven, for dark or coated pans like mine, or at 350 for a metal pan, for 38-43 minutes, until toothpick inserted in center comes out clean. Cool in pan for 15 minutes.<\/div>\n

Turn onto a cake plate and let cake cool completely. \u00a0Squeeze fresh lemon juice and grate lemon zest. \u00a0Add corn syrup and powdered sugar together. \u00a0Mix until smooth and creamy. \u00a0Glaze cooled cake by drizzling glaze over the top, allowing it to run down the sides.<\/div>\n

  • For Zesty Lemon-Blueberry Cake<\/li>\n
  • 1 Lemon cake mix<\/li>\n
  • 1 small lemon instant pudding<\/li>\n
  • 1-1\/3 cups water<\/li>\n
  • 1\/3 cup oil<\/li>\n
  • 3 large eggs<\/li>\n
  • 2 cups blueberries, rinsed and dried<\/li>\n
  • For Glaze:<\/li>\n
  • 3 Tbsp. fresh squeezed lemon juice<\/li>\n
  • 2 tsp. grated lemon zest<\/li>\n
  • 1 Tbsp. light corn syrup<\/li>\n
  • 1 cup powdered sugar<\/li>\n<\/ul>\n<\/div>\n

    Instructions<\/div>\n

    For Cake<\/div>\n
      \n
    1. Preheat oven to 325 degrees for dark or coated pans, or 350 degrees for a metal or glass pan. Reserve 1\/4 cup of cake mix in a plastic bag.<\/li>\n
    2. Mix the remaining cake mix with pudding mix, water, oil and eggs. Beat at medium speed for 2 minutes.<\/li>\n
    3. Shake the blueberries in reserved cake mix. Fold berries into the cake batter.<\/li>\n
    4. Pour batter into a bundt pan that has been greased and floured well.<\/li>\n
    5. Bake according to pan type for 38 to 43 minutes, or until a toothpick inserted in center comes out clean.<\/li>\n
    6. Cool in pan on a wire rack for 15 minutes.<\/li>\n
    7. Turn out onto cake plate and cool completely before glazing.<\/li>\n<\/ol>\n
      For Glaze:<\/div>\n

      1. Combine all until smooth and creamy.<\/li>\n
      2. Drizzle over cake, allowing the glaze to drip down the sides of the cake.<\/li>\n
