Ahhh…ripe summer peaches. What can’t ya do with ‘um?
There’s no better ice-cream, cobblers, jams, or right off the tree, they’re tops!
Well, grilling ’em does amazing things too! <\/span><\/div>\n

We grilled chicken-peach kabobs, added them to a light composed salad with a luscious dressing, for a perfectly delightful summer dinner on the patio.
Grilled Chicken and Peach Salad with Peach-Sesame Vinaigrette<\/span>
<\/span>will become a new way to indulge in a (low-carb), satisfying meal that is just peachy!<\/div>\n
<\/a><\/div>\n
You’ll need 2 pounds of skinless chicken breast, diet-7up, fresh garlic and soy sauce.<\/div>\n
<\/a><\/div>\n

With a sharp chef’s knife, slice chicken breast into bite-size pieces.<\/p>\n

<\/a><\/div>\n

Put it in a zip-top bag and add 7 Up, soy sauce, and crushed garlic cloves.
Refrigerate for at least 4 hours or overnight is even better.<\/p>\n

Pit and slice peaches and thread them lengthwise on skewers with 2 or 3 slices of marinated chicken between. I make 8 skewers, 2 for each salad.<\/div>\n

I like to make little skewers with veggies that I garnish with. I used sweet onion here, (love red and green onions too), along with green pepper. Grill what ever you enjoy, your favorites.<\/div>\n
<\/a><\/div>\n
My guy is “King of his Grill.” He likes his super kabob grill that rotates the skewers. You can use wooden skewers too, just be sure to oil your grill first so they don’t stick. Cook till they’re done. Early in the day, I like to wash and get my greens ready. I mostly use romaine and green leaf lettuce with baby spinach. I sliced cucumbers, made some “carrot chop-stix” sliced a few strawberries and toasted my sesame seeds. I put all the greens in a large bowl with paper-towels between layers and got it crispy and chilled…and all ready… yeah!<\/div>\n

In a food processor or blender make Peach-Sesame Vinaigrette<\/span>. Chill it and blend the flavors for at least an hour before serving.<\/div>\n

<\/span>Grilled Chicken and Peach Salad with Peach-Sesame Vinaigrette<\/span><\/p>\n

    \n
  • 2 lbs. boneless, skinless, chicken breast<\/li>\n
  • 2 cups diet 7-up (or any lemon-lime soda)<\/li>\n
  • 1 cup soy sauce<\/li>\n
  • 2 cloves, smashed garlic<\/li>\n
  • 2 to 3 ripe peaches, pitted and sliced<\/li>\n
  • 1 onion, sliced into 8 wedges<\/li>\n
  • 1 sliced green pepper, sliced into wedges<\/li>\n
  • 1\/3 head of romaine lettuce<\/li>\n
  • 1\/3 head red-leaf lettuce<\/li>\n
  • 1\/3 bunch baby spinach leaves<\/li>\n
  • onion<\/li>\n
  • 1 cucumber, sliced<\/li>\n
  • 2 peeled and sliced carrots<\/li>\n
  • 1 cup strawberries, hulled and halved<\/li>\n<\/ul>\n

    Slice chicken breast into bite-size pieces. Put in a zip-top bag with 7-up, soy sauce, and garlic. Refrigerate for 4 hours or even overnight. Early in the day, wash and tear lettuce into bite-size pieces and layer with paper towels to crisp. Prepare kabobs by pitting and slicing peaches and threading them onto skewers lengthwise with 2 or 3 chicken pieces between. Also, make small kabobs of veggies, onions and peppers, to garnish with. Grill over medium heat till done. To compose each salad, divide green on 4 large plates. arrange sliced cucumbers, strawberries, carrot sticks, crossed like chopsticks. Top with 2 large skewers and then garnish with grilled onions and peppers. Drizzle with Peach-Sesame Dressing<\/span>, sprinkle with sesame seeds, and serve with love.

    Peach-Sesame Vinaigrette<\/span><\/span><\/p>\n

    • 1 ripe peach, pitted and unpeeled<\/li>\n
    • 4 Tbsp. canola oil<\/li>\n
    • 2 Tbsp. sesame oil<\/li>\n
    • 2 Tbsp. honey<\/li>\n
    • 6 Tbsp. rice vinegar, seasoned<\/li>\n
    • 1\/2 cup toasted sesame seeds, plus 4 Tbsp. for garnish<\/li>\n<\/ul>\n

      Mix peach, oils, honey and vinegar in a food processor or blender until smooth. Pour into a serving bowl and add the sesame seeds. Chill for an hour before serving.<\/p>\n
