I mean really great<\/em>\u00a0and\u00a0Black Bean Tostadas with Chili-Lime Dressing are amazing. \u00a0It’s my clone of one<\/span><\/span>\u00a0I used to order at a little Mexican place in Fallbrook, California. \u00a0\u00a0<\/span>\u00a0<\/span><\/div>\n

Black Bean Tostadas with Chili-Lime Dressing<\/h2>\n

Early in the day, I thinly sliced red onion and marinated it in red wine vinegar. Believe me, the onions are not only colorful, their flavor is amazing and totally kick these up a notch! \u00a0I also mixed up the Chili-Lime Dressing, and refrigerated both.<\/p>\n

After a busy day it’s extra easy, getting it ready to serve. Rinse and drain<\/a> black beans and corn. Shred lettuce and cilantro, chop tomatoes, (or I used cherry tomatoes this round) and shred cheese. Drain black olives too.<\/p>\n

I like to serve it with chips and My Three Boys Salsa<\/a> and guacamole.<\/a><\/div>\n

\u00a0I buy crispy tostada shells, nice and easy<\/div>\n
<\/div>\n

Now layer, layer, layer!<\/p>\n<\/div>\n

Place a shell on each plate. Add drained black beans, corn and shredded cheese.<\/div>\n

Microwave for 60 seconds.<\/div>\n

<\/div>\n
Continue to layer, lettuce, cilantro, tomatoes, black olives and red onion rings.<\/div>\n

Serve vegetarian or top with grilled chicken, if desired, and drizzle tostadas with chili-lime dressing. Be sure to pass all your favorite toppings, sour cream and guacamole for sure!<\/div>\n

Ingredients<\/div>\n

  • 1 red onion, thinly sliced<\/li>\n
  • 1\/4 cup red wine vinegar<\/li>\n
  • 1 pkg. prepared tostada shells<\/li>\n
  • 3 cans rinsed and drained black beans<\/li>\n
  • 2 cans drained corn<\/li>\n
  • 1 head shredded lettuce, I use romaine<\/li>\n
  • 5 chopped tomatoes, or grape or cherry tomatoes<\/li>\n
  • 1 lb. shredded jack cheese<\/li>\n
  • 1 can pitted black olives<\/li>\n
  • 3-4 grilled chicken breast, optional<\/li>\n
  • For Chili-Lime Dressing<\/li>\n
  • 1 cup lime juice<\/li>\n
  • 1\/2 cup canola oil<\/li>\n
  • 1 Tbsp. crushed red pepper<\/li>\n
  • 1\/4 tsp. cumin<\/li>\n
  • 2 tsp. sugar (or stevia)<\/li>\n<\/ul>\n<\/div>\n

    Instructions<\/div>\n

      \n
    1. Early in the day, thinly slice red onion and marinate in vinegar.<\/li>\n
    2. Mix up Chili-Lime Dressing and chill.<\/li>\n
    3. Rinse black beans and drain well. Add drained corn.<\/li>\n

    5. Drain black olives.<\/li>\n
    6. To assemble each tostada layer: shell, black beans and corn, and shredded cheese.<\/li>\n
    7. Microwave for 60 seconds.<\/li>\n
    8. Continue to layer with: lettuce, cilantro, tomatoes, olives and red onion rings.<\/li>\n
    9. Add grilled chicken breast, if desired.<\/li>\n
    10. Drizzle with Chili-lime Dressing.<\/li>\n
    11. Serve with salsa, guacamole, and sour cream.<\/li>\n<\/ol>\n
