Rarely for this girl..<\/i><\/div>\n<div style=\"clear: both; font-family: Verdana,sans-serif; text-align: center;\"><i>But I sure do like brunch fare or even better brinner!<\/i><\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\">If you tried my <\/div>\n<div style=\"clear: both; text-align: center;\"><i><b><span style=\"font-size: large;\"><a href=\"http:\/\/singingwithbirds.blogspot.com\/2010\/04\/blissful-brunch.html\">Tuscan Brunch Casserole with Creamy Pesto Sauce <\/a><\/span><\/b><\/i><\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"text-align: center;\">then here&#8217;s another quick version I love, love, love year round.  <\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><a href=\"http:\/\/3.bp.blogspot.com\/_W7NNbAtunhA\/TAcMN_w-V5I\/AAAAAAAAIWA\/n6o_oJS_I9A\/s1600\/IMG_5890.JPG\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" src=\"http:\/\/3.bp.blogspot.com\/_W7NNbAtunhA\/TAcMN_w-V5I\/AAAAAAAAIWA\/n6o_oJS_I9A\/s400\/IMG_5890.JPG\" height=\"267\" width=\"400\" \/><\/a><\/div>\n<div style=\"text-align: center;\"><i><b><span style=\"font-size: large;\">Fiesta Brunch Casserole<\/span><\/b><\/i> <\/div>\n<div style=\"text-align: center;\">it&#8217;s got a Mexican twist and can be served in a myriad of ways!<\/div>\n<div style=\"clear: both; text-align: center;\"><a href=\"http:\/\/4.bp.blogspot.com\/_W7NNbAtunhA\/TAcTBXIR_cI\/AAAAAAAAIWU\/pUuixaaPRic\/s1600\/IMG_5893.JPG\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" src=\"http:\/\/4.bp.blogspot.com\/_W7NNbAtunhA\/TAcTBXIR_cI\/AAAAAAAAIWU\/pUuixaaPRic\/s640\/IMG_5893.JPG\" height=\"442\" width=\"640\" \/><\/a><\/div>\n<div style=\"text-align: center;\">Last night&#8217;s low-carb meal had me singing&#8230;I added chips and <a href=\"http:\/\/singingwithbirds.blogspot.com\/2010\/01\/my-three-boys-salsa.html\">salsa <\/a>to my man&#8217;s and he joined in too!<\/div>\n<p><i><b><span style=\"color: red; font-size: large;\">Fiesta Brunch Casserole<\/span><\/b><\/i><\/p>\n<ul>\n<li><span style=\"font-size: large;\"><span style=\"font-size: small;\">1 cup sliced mushrooms, fresh or canned<\/span><\/span><\/li>\n<li><span style=\"font-size: large;\"><span style=\"font-size: small;\">1 (4 oz.) can diced green chilies<\/span><\/span><\/li>\n<li><span style=\"font-size: large;\"><span style=\"font-size: small;\">1 (3.8 oz.) can sliced black olives<\/span><\/span><\/li>\n<li><span style=\"font-size: large;\"><span style=\"font-size: small;\">10 large eggs<\/span><\/span><\/li>\n<li><span style=\"font-size: large;\"><span style=\"font-size: small;\">1\/2 cup flour<\/span><\/span><\/li>\n<li><span style=\"font-size: large;\"><span style=\"font-size: small;\">1\/2 tsp. baking powder<\/span><\/span><\/li>\n<li><span style=\"font-size: large;\"><span style=\"font-size: small;\">2 cups low-fat cottage cheese<\/span><\/span><\/li>\n<li><span style=\"font-size: large;\"><span style=\"font-size: small;\">2 cups shredded cheddar cheese<\/span><\/span><\/li>\n<li><span style=\"font-size: large;\"><span style=\"font-size: small;\">5 Italian sausages, slipped from their skins, cooked and drained<\/span><\/span><\/li>\n<\/ul>\n<p><span style=\"font-size: large;\"><span style=\"font-size: small;\">Cook and drain sausage.  Let cool while you mix the rest of the casserole together.  Drain chilies and olive and slice mushrooms.  Whisk 2 eggs with the flour and baking powder till smooth.  Add the remaining 8 eggs and whisk well. Combine with the rest of the ingredients.  Pour into a greased 13&#215;9&#8243; baking dish and bake at 350 degrees for 1 hour.  Serve with salsa, warm tortillas, beans, fresh fruit or just a salad.
