She liked to visit her special butcher shop and pick up their <\/span>Pinwheel Steaks<\/span>. <\/span>She<\/span> served them on occasion for Sunday dinner. I decided I would try to replicate them with a new twist, Grilled Pinwheel Steaks with Mango Salsa, for our Mother’s Day dinner.<\/span><\/div>\n

\u00a0\u00a0A girlhood memory realized, they are amazingly easy to make, so enjoyable, plus low-carb.<\/span><\/div>\n

Grilled Pinwheel Steaks with Mango Salsa<\/h2>\n
Here’s how<\/span>\u00a0to make your own Pinwheel Flank Steaks:<\/i><\/b><\/span>

\n<\/span>I purchased 2.79 pounds of choice, beef, flank steak (from Costco) @ $6.29 per pound= $17.55, under $3.00 per serving. I trimmed as much of the fat as I could, although flank steak is very lean, your arteries will thank you!<\/span>

\n<\/span><\/div>\n
\"\"<\/a><\/span><\/div>\n

\n<\/span>Lay steak flat and pound thin. Cut into 1″ wide strips and roll into pinwheels. Secure with wooden skewers. I made 6 good-size pinwheels and…<\/span>
\n<\/span><\/div>\n
\"\"<\/a><\/span><\/div>\n

\n<\/span><\/div>\n

\u00a0As you cut straight, thin strips, you’ll find you have little scraps left. Freeze them for Steak Fajitas <\/span>down the road…Ole!<\/span>

\n<\/span>I use this
quick marinade container<\/a>, that works so well holding the pinwheels while they rest and relax for 2-4 hours. I poured 1 cup of soy sauce over the top, cover, flip, and tuck in the fridge till about an hour before Chas, throws them out on his grill. He grills them for 10-15 minutes per side.<\/span><\/div>\n

Do you love these outrageously, gorgeous, bright, yellow, mangoes? They are amazing solo, but combined with fresh red or green bell pepper, onion, cilantro, lime juice, salt and pepper…Mango Salsa <\/span>i<\/em>s absolutely perfect with meat, poultry, fish, or tortilla chips.<\/span>

\n<\/span>Combine fresh mango, bell pepper, and onion in a
food processor<\/a> or blender<\/a> and give it a little whirl as you pulse. Add fresh cilantro, lime juice, salt and pepper and pulse until it reaches the consistency you’d like.<\/span>

Grilled Pinwheel Flank Steaks with Mango Salsa<\/div>\n

Make your own Pinwheel Flank Steaks, marinade and grill them up! Next add a delectable Mango Salsa to serve with them for a extra special meal.<\/div>\n

Ingredients<\/div>\n

  • For Pinwheel Steaks<\/li>\n
  • 2-1\/2 pounds flank steak<\/li>\n
  • 1 cup soy sauce<\/li>\n
  • 6 wooden skewers<\/li>\n
  • For Mango Salsa<\/li>\n
  • 2 large ripe mangos, peeled and cut into chunks<\/li>\n
  • 1 bell pepper, cored and cut into chunks<\/li>\n
  • 1\/2 onion, cut into chunks<\/li>\n
  • 1\/2 bunch fresh cilantro, chopped<\/li>\n
  • 2 fresh limes, juiced<\/li>\n
  • salt and freshly ground black pepper<\/li>\n<\/ul>\n<\/div>\n

    Instructions<\/div>\n

    For Pinwheel Steaks<\/div>\n
      \n
    1. Trim all visible fat from steak<\/li>\n
    2. Lay steak flat and pound thin.<\/li>\n
    3. Cut into 1″ wide strips and roll into pinwheels.<\/li>\n
    4. Secure with wooden skewers.<\/li>\n
    5. Marinade in soy sauce for 2-4 hours<\/li>\n
    6. Preheat grill<\/li>\n
    7. Grill for 10-15 minutes per side, (on low to medium setting for gas grill)<\/li>\n<\/ol>\n
      For Mango Salsa<\/div>\n

      1. Combine all ingredients and pulse in a food processor or blender until you reach the consistency that you like.<\/li>\n
      2. It can be made several hours ahead and chilled.<\/li>\n
