Cranberry Barbecue Chicken

In the spirit of giving, here you go Mikaela…

I’m sure I’ve mentioned that I’m taking a class at our local University. One of my favorite coeds, Mikaela, gave me some food for thought. Looking at my blog, she complained that all my recipes look so complicated and use too many ingredients. Instantly one of my easiest and best chicken dishes came to mind. It’s a snap to create, contains only 5 ingredients, and bakes while you’re busy doing other things. It’s perfect for Sunday dinner, holiday parties and busy coeds everywhere!
Cranberry Barbecue Chicken will be one of your favorite go to dishes. It’s delicious using pork chops or boneless ribs too, and goes well with almost any side dish.
Brown and season boneless chicken breasts, (thighs are good too).   Lay flat in a baking dish.
Chop a yellow onion and sprinkle over the chicken.
Mix whole cranberry sauce and barbecue sauce together and pour evenly over chicken. Cover tightly with foil and bake for 3 hours.

Serve with your favorite sides…my choice this time, brown rice and steamed cauliflower.

Cranberry Barbecue Chicken
 
This is perfect party fare, Cranberry Barbecued Chicken is oh so easy and nice enough to serve a holiday crowd.

Serves: 6 servings
Ingredients
  • 6 boneless, skinless, chicken breast
  • 2 Tbsp. olive oil
  • 1 cup chopped onion
  • 1 can whole cranberry sauce
  • 1 cup barbecue sauce (use your favorite, I prefer Cattleman's)
Instructions
  1. Brown chicken breast in olive oil.
  2. Season to taste with salt and pepper.
  3. Place in a 9x13" baking dish.
  4. Sprinkle onion over chicken breast.
  5. Combine cranberry sauce and barbecue sauce and stir together.
  6. Pour evenly over the chicken.
  7. Cover with foil and bake for 3-1/2 hours at 300 degrees.
Notes
I have served this to big groups of 50 plus and it cooks really well in a big 18 quart roaster oven. It's perfect for holiday parties and can be made ahead.

    I actually think your recipes are written in a way that’s EASY for me to follow. I use more of your recipes than any other place in blogland.

    Thanks to you, that husband rises and calls me blessed on a regular basis.

    Maybe I just have the kind of stuff around here that you use or something. Or… maybe I’m just a groupie so I don’t notice.

    Anyway, I love LOOOOVE this one! I think I’ll try it for Saturday night. I’ll cut it in half for my lonely table for two.

    Will definately try this recipe next week (we just finished the last of turkey.) I used to say “I never cook anything with more than 5 ingredients” and then all the new cookbooks came out using no more that 5 or 6 ingredients and they were just up my alley. Quick and easy is my motto. Thank you for sharing. BettyLou

    Oh this does looks so good. 3 1/2 hours, even with chicken breast? I guess the covering with bbq and cranberry sauce keeps it moist.

    I have to disagree with her! I think your recipes are wonderful. It is nice to have both complicated and easy recipes and I have never thought yours were complicated.

    The hubby would just love this. I need to make it tonight as we were out of town and I usually do an extended family turkey dinner but didn’t this year. He adores cranberry sauce. I keep a couple of cans in my years supply just for him!
