English Toffee Cheesecake Bars
So because it’s Friday and we love ya, we’re sharing our English Toffee Cheesecake Bars! It’s like, English toffee and cheesecake were just meant to be together. These melt-in-your-mouth treats are absolutely delicious, and everyone will want seconds.
It all starts with a cookie crust, then pour on silky smooth cheesecake and bake. Chill them before cutting, and then toffee them up with chocolatey crunchy candy.
Now for the fun part, use a kitchen torch or slip them under the broiler, watching carefully so you only caramelize the toffee bits, creating a true crunchy crust on top! Try to eat just one….they are heavenly!
“Because you don’t live near a bakery, doesn’t mean you have to go without cheesecake.” ~ Hedy Lamarr

To create the cookie crust:
Heat oven to 350°F. Lightly spray bottom and sides of 13×9-inch pan with cooking spray. In large bowl, stir cookie mix, pudding mix, brown sugar, melted butter, 1 teaspoon of the vanilla and 1 whole egg until soft dough forms. Press dough in bottom and 1/2 inch up sides of pan.
Now make the cheesecake filling:
In small bowl, beat cream cheese, sour cream and sugar with electric mixer on medium speed until smooth. Add remaining whole egg, 3 egg yolks and remaining 1 1/2 teaspoons vanilla; beat until smooth. Spread over crust in pan.
Bake 30 to 35 minutes or until set in center. Cool completely. Refrigerate about 3 hours or until chilled.
Finish with a English toffee topping:
Cut bars and sprinkle tops evenly with granulated sugar, about 1 teaspoon per bar. With a kitchen torch caramelize the tops of each bar. Sprinkle with the English toffee bit-almond topping. Again with the torch, quickly melt the chocolate and lightly toast the nuts. Let them set for about 5 minutes and serve.
- 1 pouch (1 lb 1.5 oz) sugar cookie mix
- 1 box (4-serving size) French vanilla instant pudding and pie filling mix
- 2 tablespoons packed brown sugar
- ½ cup butter or margarine, melted
- 1 egg
- 1 teaspoon vanilla extract
- 1 egg plus 3 egg yolks
- 2 packages (8 oz each) cream cheese, softened
- ½ cup sour cream
- ½ cup sugar
- 1-1/2 teaspoons vanilla extract
- ⅔ cup English toffee bits
- ¼ finely chopped almonds
- ½ cup sugar
- Heat oven to 350°F. Lightly spray bottom and sides of 13x9-inch pan with cooking spray.
- In large bowl, stir cookie mix, pudding mix, brown sugar, melted butter, 1 teaspoon of the vanilla and 1 whole egg until soft dough forms.
- Press dough in bottom and ½ inch up sides of pan.
- In small bowl, beat cream cheese, sour cream and sugar with electric mixer on medium speed until smooth. Add remaining whole egg, 3 egg yolks and remaining 1½ teaspoons vanilla; beat until smooth. Spread over crust in pan.
- Bake 30 to 35 minutes or until set in center.
- Cool completely. Refrigerate about 3 hours or until chilled.
- Cut bars and sprinkle tops evenly with granulated sugar, about 1 teaspoon per bar.
- With a kitchen torch caramelize the tops of each bar.
- Sprinkle with the English toffee bit-almond topping.
- Again with the torch, quickly melt the chocolate and lightly toast the nuts.

This cookie bar would be great for my birthday (and that’s today).
Such a lovely recipe. Easy to follow and the result looks just delicious. I can make this with another celebration!
Happy Birthday Sabine!!!! Make a batch and have a great day for us.
This desert is Combined two of my favorite foods, cheese and to feel! Is it possible to add less sugar to the crust and topping? Or is going to ruin the consistency? I only love to feel the sugar in between.
The sugar really breaks up the tartness of the cream cheese and sour cream. You could try it with less sugar or you could make it and give away half! 🙂
Yes Gigi, you can always cut back on the sugar.

Another yummy learnings from you girls! Wifey and daughter love any pastries either w/ chocolates or cheese. And this one is certainly one will certainly land on their to try list. I wonder how the toffee and cheese will make wonders in my taste bud?
They are not overly sweet Sonnie, we hope you like them!
I normally don’t like sweets because refined sugar causes me migraines, but I always have a soft spot for cheesecake! The combination of the biscuit base, cheesecake filling and creme brûlée sounds like a match made in heaven! It sounds so simple to prepare!
I adore your use of colour in the first images; the yellow napkin pairs with the hue of the cheesecake perfectly! I want to reach through my screen, grab a slice and devour it completely!
(We are currently staying with my partner’s parents before we go hiking in Portugal; her favourite dessert is cheesecake so I might prepare it for her as a way to say thank you!) Thank you again for a wonderful recipe, I’m really looking forward to more of your work! 🙂

I don’t know if there are enough words to describe how heavenly they are! I couldn’t resist, so eating only one bar was not an option. Thank you and keep it up with the gorgeous recipes. I never thought that cheesecake and toffee can go so well together. I love backed cheesecakes, I think the flavour gets better when baked. And I can only imagine how good it is with the toffee almonds on top.
We have another amazing cheesecake idea coming your way next week, Joanna!
