Fiesta Brunch Casserole
- 1 cup sliced mushrooms, fresh or canned
- 1 (4 oz.) can diced green chilies
- 1 (3.8 oz.) can sliced black olives
- 10 large eggs
- 1/2 cup flour
- 1/2 tsp. baking powder
- 2 cups low-fat cottage cheese
- 2 cups shredded cheddar cheese
- 5 Italian sausages, slipped from their skins, cooked and drained
Cook and drain sausage. Let cool while you mix the rest of the casserole together. Drain chilies and olive and slice mushrooms. Whisk 2 eggs with the flour and baking powder till smooth. Add the remaining 8 eggs and whisk well. Combine with the rest of the ingredients. Pour into a greased 13×9″ baking dish and bake at 350 degrees for 1 hour. Serve with salsa, warm tortillas, beans, fresh fruit or just a salad. It’s all good!
