Salmon Marinade and Avocado Cucumber Salsa

Ready to “fly your coop?”  High temperatures got you seeking shade and feeling tuckered out?
Grilled Salmon with Avocado-Cucumber Salsa fast and fabulous will give you time to put your feet up, grab a book and cool it, making for a great day!
At least 1 1/2 hours before serving, make a simple marinade for your salmon steaks (or fillet).  Cover your salmon and tuck in the fridge for at least 1 hour…I do it early in the day 5 to 6 hours ahead, cause I like lots of flavor…


Chop fresh cilantro.  Dice cucumber and red onion…


Add it to diced pineapple, fresh is heavenly, canned works…now add the juice of 1 lime…










Peel and pit an avocado.  Dice it small…
Carefully give it a gentle toss, cover and chill.
Preheat your grill about 20 minutes before you’d like to eat.  We like to use a grill basket for all fish that we grill.  Also, every grill can be different.  My guy grilled our salmon steaks over low heat for 6-7 minutes per side.  Be careful not to over cook it.  It cooks quickly, so watch it…you can always “throw it back!”
Serve with a little steamed or grilled corn and watermelon stars.  It’s so amazingly easy, tasty, summery lite.

Simple Salmon Marinade
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1/4 cup Dijon Mustard
  • 2 Tbsp. brown sugar
  • 1 Tbsp. rice vinegar (I use seasoned)
Combine and pour over salmon.  I like to use a zipped bag…but anything sealed will work.  Chill for 1 hour minimum or up to 5 or 6 hours for more flavor.  20 minutes before serving, preheat grill.  Grill for 10 to 15 minutes over low heat.  If you don’t have a grill basket, make sure your grill rack is really clean and rub a little oil on it, so your fish won’t stick.

Avocado-Cucumber Salsa
  • 2 Tbsp. finely chopped fresh cilantro
  • 1/4 red onion, finely chopped
  • 1 large cucumber, peeled and small diced
  • 1/2 cup fresh pineapple, small dice
  • Juice of 1 fresh lime
  • 1 avocado, peeled, pitted and small diced
  • 1/4 tsp. kosher salt
  • 1/4 tsp. ground black pepper
Gently toss, cover and chill for 1 hour before serving.

Seek shade, and smile all!

    I tried the salsa recipe tonight with some grilled salmon and tilapia. Fantastic! I served this along with brown rice and peas and a side salad. Everyone raved over that salsa! I loved the lime and pineapple flavors up against the red onion – tasted oh so exotic.
