Strawberries ‘n Cream Scones with Vanilla Glaze
Who doesn’t love a wedding?
I’ve tried not to buy into six months of media hype… they are such a beautiful couple, full of promise…and royals after all.  I have felt like “OK, so that’s nice,” until this week.  It’s embarrassing, I’m even excited for tomorrow.

I love a great wedding, especially when I’m not hosting it!

So we are ready to celebrate in our king-size bed, with 
Royal Strawberries ‘n Cream Scones 
with Vanilla Glaze
and cups of steamy herbal mint tea!
Tasty and tender, perfect for a Royal Tea Party.  Let’s get mixing!
Combine dry ingredients and add softened butter…
with a pastry blender or fork, mix the butter into the flour well.  Add diced fresh strawberries, gently coat with flour.  Now add the cream, gently mixing by hand with a spatula. If you’ve got time you can refrigerate for 2 hours or overnight.  Often I just mix it up and bake it though.  It will be moist and sticky.  Gently knead a few times on a lightly covered surface.  Pat into a 8 to 10″ circle, about 1 inch thick and cut into 12 pieces.  Sprinkle with about 2 tablespoons of sugar and bake in a 400 degree over for 20 to 25 minutes.  Remove from hot oven and let cool for about 5 minutes.  Drizzle with vanilla glaze and garnish with sliced strawberries.
Serve with a light, minty herbal tea…

{Royal} Strawberries ‘n Cream Scones with Vanilla Glaze
  • 2 cups all-purpose flour
  • 1/4 cup + 2 tablespoons sugar, divided use
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons butter
  • 1 cup strawberries (diced)
  • 1-1/4 cups heavy cream
In a large mixing bowl, combine flour, 1/4 cup sugar, baking power, and salt. Cut butter into dry ingredients. Stir in strawberries.  Add heavy cream and stir by hand just until dough forms.  Dough will be soft and sticky. Cover and refrigerate 2 hours or overnight. Preheat oven to 400 degrees F.  Turn dough out onto a lightly floured surface and knead gently until dough just holds together. Press dough into a 8 to 10-inch circle. Cut into 12 wedges. Place scones on baking sheet and sprinkle scones with reserved sugar.  Bake 20-25 minutes at 400 degrees or until scones are a light golden brown on top. Drizzle with Vanilla Glaze, garnish with sliced strawberries, and serve with lots of love and hot herbal tea!  Makes 12 servings.
Vanilla Glaze
  • 1 cups confectioners’ sugar
  • 1 teaspoons milk
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon butter

Melt the butter and add to rest of ingredients. Mix until creamy and drizzle over hot scones.

    I love scones, and these look fabulous! I was up at 2:35 AM the day of the wedding and took blueberry scones and tea to a friend’s house to watch it with her. Westminster Abbey is such an amazing, historical structure. It was such a privilege to attend the memorial service of the 400th anniversary of the death of Queen Elizabeth I in the Abbey. (Kinda strange, the memorial of her death, but…) I LOVE the photos of the inside of the abbey during the ceremony. I this this union secures the future of the monarchy, at least for a couple generations.

    I have previously made scones for my family and they were loved by my family so I was excited to try these! I made this recipe and followed it, adding only cinnamon for extra taste. Somehow these did not turn out properly… the dough was very wet and the scones did not rise as they baked. Instead, they spread out over the baking sheet and flattened out. The scones had a very strange texture and looked like cake instead of the crumbly texture I expected… Any suggestions on what I did wrong?
