Joyfully, Spring flocks of birds have been amazing each day…
let me introduce you to three of our garden guests.
We have probably had Lazuli Buntings in our garden all winter, but in the Spring, breading males turn a bright turquoise. We have had huge flocks of these birds singing sweet songs each day!
We observe a non-stop frenzy around the feeder.
We have seen several pair of glossy, Brown-Headed Cowbirds, a “compact and stocky” blackbird.
Striking, male breeding, Western Tanagers, true redheads, and many of their duller, green females have filled our garden with song. Each day they remind me how much I adore birds, one of God’s most magnificent creations for sure.
Saturday we weeded, planted flower boxes and cleaned our garden with warmer weather forecast, we hoped for Sunday dinner on our patio. A favorite that can be prepared on Saturday,
Susan’s Chicken Salad,
sounded so good. I like to serve fresh fruit with it and a savory bread.
We woke to rain and gray skies all day Sunday.
As we sat up to our dining table, we laughed about our cravings for yummy warm soup!
Summer will come and we will all enjoy a low-carb salad on a hot sunny day. Here’s the recipe!
Susan’s Chicken Salad
2 cups cooked, cubed chicken breast
1 cup chopped celery
salt and pepper to taste
1 Tbsp. fresh lemon juice
1 cup grapes, halved
1/3 to 1/2 mayonnaise
toasted slivered almonds
Carefully mix chicken breast, celery, salt, pepper and lemon juice together. Add grapes and gently mix in mayonnaise. Serve on a bed of finely shredded romaine. Sprinkle toasted almonds on top. Garnish with fruit, or tomatoes and black olives are nice too. This salad is also delicious tucked in a croissant!

I was thinking about making chicken salad today as a treat for my daughter (The one on the mission trip… She finally DID make it home PTL!)
I need to head to the grocery store anyway so I think I’ll pick up almonds since they are the only ingredient that I’m lacking for your recipe. The daugher loves chicken salad.

I love watching birds too. We are lucky to be just 2 miles from Forest Park in New York where there are many birds to be seen especially in the spring. Speaking of spring, our weather has been disgustingly hot and humid- I would gladly send you some, but this morning a gift- 65 degrees and 50% humidity!

Your bird photos are wonderful. I wish I could see them in my back yard. However, I did see some pretty nice looking cantaloupe in the market this morning and am going to run back and get one so I can make this salad.

Chicken salad is a favorite, but your photos win the prize.
This is the second recipe I have seen for chicken salad and I like how you added slivered almonds to yours! Looks so yummy!
