Baked Rice Krispie Chicken

It’s one I remember my mom fixing often.  It’s been updated with less fat and calories and bakes up moist inside and crispy on the outside in 30 minutes.

Begin by preheating oven to 350 degrees.  Line a rimmed baking sheet with parchment paper.  You’ll need pantry items plus a little Parmesan cheese and yogurt…
and washed and dried boneless-skinless chicken breast.
Add rice cereal to a plastic bag and lightly crush them with a rolling pin.  Next add Parmesan cheese, paprika, cumin, salt and pepper and shake it well.  Pour it into a shallow dish.  Next coat chicken with yogurt and then roll it in the cereal mixture, pressing gently to help it adhere. Place chicken on prepared baking sheet.  Bake until golden brown and cooked through, about 30 minutes.
Steam up some fresh veggies for a healthy in a hurry meal that will top your menu chart often.

A favorite of my mom's, this chicken recipe was on her monthly rotation. She used crushed cornflakes or rice checks too. It's a favorite with my family too...enjoy!

Ingredients
  • 4 cups rice cereal
  • ¾ cup Parmesan cheese
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup plain Greek yogurt
  • 8 (6 oz.) skinless boneless chicken breast
Instructions
  1. Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment paper. In a plastic bag combine cereal, Parmesan cheese, paprika, cumin, salt and pepper. Mix well and pour it into a shallow bowl. Coat both sides of chicken with yogurt and then roll in cereal mixture. Press gently so that the mixture adheres. Place on the prepared baking sheet and bake for 30 minutes or until golden brown and cooked through.
Notes
Try making this with a gluten-free cereal. My GF family members really like it.

    I had a similar recipe with corn flakes but it did not have the cumin or yogurt, two things that I happen to like.
