Avocado Butter Lettuce Salad with Lemon Vinaigrette

Cheer with us if you agree, it’s time to lighten up!  Here’s our nod to a perfect Springtime salad, Avocado Butter Lettuce Salad with Lemon Vinaigrette.

It’s absolutely luscious with creamy goat cheese and ripe avocados, toasted sliced almonds, and a light, lemony, dressing that is so refreshing.

I remember my first experience with butter lettuce.  We were visiting friends in Germany, who plucked a beautiful head from their vegetable garden.  I was totally smitten.

It is a little pricey, but I was delighted to find it reasonably priced at my Costco.  Give it a try, I’m confident you’ll agree with me, butter lettuce is worth paying a bit more for!

Wash and chop the butter lettuce, I always use this lettuce knife, that helps to prevent rust.

Use 1 to 2 heads, depending on how large you would like to make each serving.

Mound lettuce on plates with a scoop of chévre on each plate.

Using a microplane or zester, zest the lemon over the top of the salad.

Combine vinaigrette ingredients in a jar and shake until combined.

Garnish with avocado chunks and drizzle lemon vinaigrette over salad.  Top with toasted almonds and serve.

Ingredients
For Salad
  • 12-ounces of butter lettuce chopped (1-2 heads depending on your salad serving)
  • ½ cup chévre (fresh goat cheese)
  • 1 large ripe avocado, chunked
  • ½ cup sliced almonds, toasted
  • 1 large lemon for juicing and zesting
For Vinaigrette
  • ¼ cup lemon juice
  • 2 Tablespoons cider vinegar
  • 1-1/2 Tablespoon sugar
  • ½ cup olive oil
  • Salt and pepper
Instructions
  1. Wash and chop the butter lettuce.
  2. Mound lettuce on plates with a scoop of chévre on each plate.

  4. Combine vinaigrette ingredients in a jar and shake until combined.
  5. Garnish with avocado chunks.
  6. Drizzle vinaigrette over salad.

    I’ve never tried butter lettuce… Got curious about it now as I’m a little picky with vegetables… But I’m sure the lemon vinaigrette is fabulous! It’s probably delicious with all sorts of meals!

      Butter lettuce is richer than a romaine lettuce but it is really good. The lemon cuts through it like butter – get it! 🙂

    I find this delish and healthy at the same time! I would definitely give this recipe a try. I wonder if we run out of butter lettuce, can I use a different lettuce instead? Just in case butter lettuce runs out of stock in the market.

    I love this avocado butter lettuce salad. The lemon vinaigrette dressing is perfect and healthier choice of dressing compared to those creamy ones. Avocado is my favourite fruits and food, it goes well with anything be it salad, sandwich, wraps, sushi or just by itself. Going to try out this recipe soon.

    A vitamin E – boost salad today 🙂 Avocado is very healthy and contains very rich vitamin E and GOOD cholesterol . A welcome recipe , as the days are getting hotter , it’s gonna be more salad days again . A bit off topic , but I love avocados even more in/on my face 🙂 I use the very ripe ones to make a pampering facial masque out of it. Mixed with a few drops of olive oil , if you like a deep cleansing scrub effect , add a bit of sea salt . Avocado is amazing , in and out !
