Berry Low-Carb Trifle

Welcome!
What is the one thing that brings families together no matter how inconvenient the time may be? Food! Sunday dinners, holidays, birthdays–you can always count on the family being together and everyone being hungry!
I love family dinners and have created amazing memories during those times. But I have one restriction: I have diabetes.
When you fight diabetes and blood sugar you have to get creative and be prepared so you don’t have to completely restrict yourself when it comes to a treat. My family connects at the dinner table and can spend hours talking over dessert. So I always make sure I make a dessert that everyone can eat. I’ve found that it magically helps all of my guests feel more comfortable too. My motto, Life’s short–no one should feel left out when it comes to dessert!

Berry Low-Carb Trifle
Over the years I’ve been invited to many social gatherings. It seems almost everyone is watching their weight or dealing with sugar challenges these days. That’s why this dessert has become my go-to dessert for all occasions. If I don’t say, “It’s low-carb,” no one knows but me! But I can offer a delicious alternative to those who are careful about their sugar intake. Honestly, it is almost always the first dessert gone!
My Berry Low-Carb trifle has the best of both worlds with a light angel food cake layered in between a delicious pudding and cream mixture filled with fresh fruit layered on top of each other creating an aura of richness without all of the sugar.
Let me teach you how to make my Berry Low-Carb Trifle. Yes, you can have your cake and eat it too!
I made this tonight to serve tomorrow and tasted the extras- it is delicious! I used sugar free/fat free white chocolate pudding. Divine! Thank you for sharing!
We are so glad you liked it Christina, thanks!

Thank you so much for this. My sister and I both have juvenile diabetes. It’s so nice to find new things to make that won’t be bad for us. I can’t wait to share this with her!

Yummy can be healthy!! 🙂 I love trifle and yours looks BEAUTIFUL!!!
I make something similar but use cool whip. I also like to put crushed pineapple sometimes in the pudding, cool whip mixture. It looks gorgeous!
Oooh that sounds good. Pineapple is extra delicious, but sadly high in carbs for those of us that have to watch them. Thanks though for sharing what you like to add to your trifle.

I am going to get a trifle dish just so that I can make this! It’s gorgeous, delicious, and healthy!! What more could you ask for? =)
Looks delicious! I just did a trifle, but there was not a healthy ingredient within 100 paces of it! This looks wonderful.
That looks soo delicious! I think it’s great to have such a beautiful dessert that is a low carb option. Well done!
Thanks Dee, it’s easy and pretty too!
Looks beautiful! Your recipe is very similar to my Peach Melba Trifle but I use sweetened condensed milk. I just might try substituting non-fat milk and see how it turns out!
Yum! This looks so great! I need to try to cut back on carbs, but it’s so hard. This might actually fill my carb desires!
That looks extremely delicious!!! I have saved the recipe and will definitely give it a try ;o)
This trifle looks amazing! I especially love that angel food cake was included. Yum! Thanks for linking up last week for Friday Favorites!
You know why they call it angel food cake, right Jerri? It’s a perfect cake for you!
This is a perfect article for me! I’ve been on a low-carb diet for 5 years already. I’m a borderline type 2 diabetic and I’ve been on medication (1,000 mg of metformin a day!) for 4 years. I stopped taking medication because I am really having bad side effects with metformin and decided to be strictly serious with my diet. So far, I’ve been having great lab results.
That is awesome! Great job at getting serious about it and getting off the medication! Hard work! Hopefully, you can find some good ideas ideas here for other low-carb meals!
Brovo Roselle, way to take and keep control!
Wow Alison, what a great desert! I’m off white sugar for a while and low carbs are always a good thing! I will try this one and then I’ll give you a feedback on your Facebook page!

Ooh this looks delicious and I love that it’s got kiwi in it. It’s not a fruit we usually see in a dessert
You’re right Georgia, kiwi makes it a little unusual, thanks!

I liked the way that you shared your family details.Humorous and hilarious too.Yes, a happy family means a happy kitchen. In India, kitchens are the most important part of the household.Come to India and we will go kitchen hopping.
I could eat this all day, except I wouldn’t want to because it’s so pretty. Then again, I can always make two – one for display and the other to relish.
