So, Aussie Chicken was love at first bite, a true “down-under wonder!”
I must admit we aren’t Sunday football fans, but we enjoy having our family join us for easy eats and good times. With Mom and Dad partying at Disney World, we have been caring for three of our grandsons and so this weekend we got both.
Aussie Chicken with baked potatoes and broccoli seemed ideal for this “growing boy!” I tried to lighten it up by grilling chicken breast and deleting mayonnaise from the honey-mustard sauce. It’s a quick-fix, grilled chicken, topped with honey-mustard, bacon, mushrooms, and Colby-Jack cheese, baked for 30 minutes in a 350 degree oven. All you have to do is serve with favorite sides.
If you are looking for love, and good times, this may be a good place to start!
Easy, peasy, chicken from down under!
- 6 chicken breast, boneless, skinless
- seasoning salt
- 6 slices bacon, cut in half and cooked
- ¼ cup mustard
- ¼ cup honey
- 2 green onions, thinly sliced
- 1 cup fresh mushrooms, thinly sliced
- 2 cups Colby-Jack cheese, shredded (I used a slice for each breast)
- Grill chicken breasts for 20 minutes.
- Arrange in a 9x13" pan and sprinkle lightly with seasoning salt.
- Combine honey and mustard and drizzle over the grilled chicken.
- Top with cooked bacon slices, green onion slices, mushroom slices and cheese.
- Bake in a 350 degree oven for 30 minutes or until cheese is bubbly.
Gluten free and low carb.
Serving size: 6
Happy Dinnie All!
This looks yummy to me since every ingredient happens to be on my “like it” list, right on down to the jack cheese. I prefer honey/mustard without mayonnaise myself.
You have such a great looking family. Every time I see a picture, I think that.
That sounds yummy!
What a handsome young man your grandson is!
Thanks to both of you…this guy is camera-shy and even let me take his picture. I couldn’t resist adding him to my collection of grand treats!
That looks delish! Wishing it was replacing my dinner tonight.
What a great looking young man he is!! Takes after his grandma!!! 🙂 This looks yummy, I am always looking for new chicken recipes, bookmarking this one!!!
What a handsome young man! You are very lucky and I feel the same way and look forward to the day when our grandson is the same age. I’ll look forward to making something delicious like this for him 🙂
How fun that you are getting time with your grandsons! The recipe looks great except for one thing: I hate mushrooms. 🙁 But I would be happy to pick them out. 🙂
But it doesn’t matter if I do or don’t… the main man is your grandson and if he likes it!
That looks so good. I’m afraid I would have kept in the mayo. I’m bad like that.
Mmm-mmm, good! I’ll be trying this recipe soon! It must be fun being a grandma. Your grandson is a handsome young man! 🙂
Renee, love this recipe, and that boy too. Joni
