So here’s how it started. Recently I wanted to make a birthday cake for my DIL, Kim.
I know her very favorite is a funfetti cake, but I wanted to surprise her with a little something different. Then I remembered Kim likes to pin so I visited HER pin boards and found Cake Batter Rice Krispy Treats.
I made up a batch, pressed it into a heart-shaped springform pan to show my love and wrapped it up. She was surprised and delighted when I gave it to her. She’d wanted to make it, but hadn’t yet. It was a yummy spin on her favorite funfetti cake and super easy for me to make, win-win! It has cake batter in it, so it really did have a birthday cake flavor plus all the colorful sprinkles.

Cake Batter Rice Krispy Cake
Gift-able, yummy and quick, KIDS of all ages love this treat!
Ingredients
- 3 Tbsp. butter
- 1 (10 oz.) bag of mini-marshmallows
- ⅓ cup dry yellow cake mix
- 5 cups crispy rice cereal
- 1 (1.75 oz.) container of sprinkles
Instructions
- Melt butter in a large saucepan over low heat and add marshmallows. Stir until they begin to melt, adding in (dry) cake mix one spoonful at a time so its combined. Stir in cereal so it is completely coated with marshmallow mixture. Sprinkle in half of the sprinkles and mix. Press into a baking dish (any size will do) and top with remaining sprinkles. Let sit for about 30 minutes before cutting. I find spraying a knife with nonstick spray helps to cut them.
Notes
Many readers have asked what to do with the remaining cake mix. If you would like to use it to whip up a batch of cake mix cookies, just measure out 6 oz. of the remaining cake mix, and combine it with ¼ cup vegetable or canola oil, and 1 egg. Stir until mixed. Then form into cookie dough balls, and bake in a 350 degree oven for 10-12 minutes.

Who knew you could put cake mix in rice crispies? I love them normal, this would put them over the top!

Ok, not only is the funfetti Krispy cake just adorable, but you have also rocked my socks with the part at the end about the leftover mix. I make cake mix cookies all the time, but I never thought (DUH!) to make the batch smaller. Really and truly, I’m feeling like a dip for not doing it.
